Chili Lime Texas Caviar (also known as Cowboy Caviar) is the BEST salad, side dish or appetiser for any occasion!&nbsp;Vegan AND gluten free!

Chili Lime Texas Caviar (Cowboy Caviar)

(400 grams) can black eyed peas/beans (rinsed and drained)

(400 grams) can black beans, (rinsed and drained)

(400 grams) can sweet corn (rinsed and drained)

red bell pepper (capsicum), (finely diced)

green bell pepper (capsicum), (finely diced)

red onion, (diced)

grape tomatoes, (, halved (or cherry tomatoes

avocados, (diced)

Cilantro ((or parsley), finely chopped)

olive oil

lime juice, (freshly squeezed)

cilantro, ((freshly chopped))

garlic, (crushed)

brown sugar

red chilli flakes, (adjust

Cumin

salt

Veggie sticks (Nacho chips, Tortilla chips, etc)

Combine salad ingredients in a large bowl. Mix together to combine. Set aside.

Whisk dressing ingredients together in a smaller bowl, until well combined.

Pour dressing over salad, stir through, and serve with chips or veggie sticks.

Cowboy salsa has fresh vegetables, black-eyed peas and beans in a tangy dressing. Make this Texas caviar dip for a tasty snack or appetizer!

Cowboy Salsa (Texas Caviar Dip)

chopped bell peppers ((See Note 1))

Roma tomatoes (seeded and diced)

onion

poblano chile (seeded and diced)

jalapeño pepper (seeded and diced)

cilantro (or flat leaf parsley)

oz black eyed peas (drained and rinsed)

oz black beans

8.5 oz corn kernels (drained,

avocado (seeded and diced (optional))

lime juice ((about 2 limes))

tbsp red wine vinegar

tbsp honey

tsp salt

tsp black pepper

garlic powder

tsp Mexican oregano (or traditional oregano)

tsp cumin

Add all peppers, tomatoes, chiles, onion and cilantro to a large bowl.

Drain and rinse the beans, peas and corn. Add to the bowl.

In a small bowl, whisk together the dressing ingredients and pour over bowl of salsa ingredients. Use tongs to toss and combine ingredients. Cover and refrigerate at least an hour (or overnight) for flavors to meld. Toss again before serving.

Serve with tortilla chips or your favorite chips for scooping.

Healthy Cowboy Caviar

black-eyed peas

black beans, rinsed and drained, or 1 1/2 cups cooked black beans

corn kernels (about 2 ears of corn),

tomatoes (I used about 4 Roma tomatoes, about 3/4 pound)

red, orange or yellow bell pepper

red onion (about 1/2 small red onion)

cilantro, leaves and stems

jalapeños, ribs removed, seeded and finely chopped

avocado (optional)

red wine vinegar or lime juice

garlic, pressed

salt,

oregano

basil

maple syrup

red pepper flakes

black pepper,

In a large serving bowl, combine the drained black-eyed peas, black beans, corn, chopped tomatoes, bell pepper, onion, cilantro and jalapeño. If you&#8217;ll be including avocado, wait to dice it until you&#8217;re ready to serve the dip, so it doesn&#8217;t turn brown in the meantime.

In a cup, whisk together the dressing ingredients until emulsified. Drizzle the dressing over the serving bowl and toss until well mixed. Season to taste with additional salt and pepper. For best flavor, let the mixture marinate for at least 20 minutes before serving. If you&#8217;re adding avocado, mix it in just before serving.

This looks delicious, I've made salads very similar to this and it's really nice serving in a little gem leaf as a side salad to grilled/BBQ meats. 

I will definitely be making this salad, I love corn, I'm not sure I can get canned black eyed beans. I shall have to do some research.

Yes my daughter made this and it was really good, I think she used black beans and I had to pick them out as I don't like them :) other than that it was great....
Now I am trying to get her to make the cauliflower hamburgers....LOL...... will let you know if she does.....she cooks healthy too and she loves your recipes......

I just made this for a friend's housewarming party last night and it was a HUGE hit! I couldn't find black beans, so used all black-eyed peas for this round, and added an extra red pepper just because. Will definitely be making again!

I've made this twice in the past week!  My husband loves it, I love it!  I'm 8 months pregnant and am craving fresh, bright flavors so this is perfect.  We've had it as a side salad, once with chips, once without.  We also put it in quesadillas which was fantastic.  Thanks for a great recipe!

I LOVE this recipe, and it has become a staple for potlucks- it only takes about 20 minutes to whip together, and it stores easily in the cooler for a day or two if we are going camping or to a music festival. I have made it already 3 times this summer for potlucks and every time I come home with an empty bowl! I also live in Northern California, land of the crazy picky fad diet eaters, and this recipe pretty much works for any dietary restrictions- gluten free, soy free, vegan, dairy free... don't think it's paleo because of the beans but you can't please everyone! 

I buy a strawberry balsamic vinegar from our local farmer's market and use half strawberry vinegar, half lime juice. I hardly need any maple syrup that way. People FLIP out for this recipe. THANK YOU!!

I used black beans, kidney beans and 
Black eyed peas, frozen corn, cherry tomatoes-halved, green pepper diced and bottled zesty italian dressing. Tossed it and was a winner! Next time we will use cilantro. Maybe a lil lime juice. A winner

Hi, Kate!  I loved the cowboy caviar itself, but for whatever reason, I wasn't super crazy about the accompanying vinaigrette.  I ended up putting a healthy dollop of guacamole on the caviar instead. :-)

Made this today with kidney beans instead of black eyed peas, and put frozen seasoned corn in it (which helped cool the whole salad down by the time I had everything else chopped).  Delicious flavor, added avocado separately so it didn't brown.

I may be projecting, but I think people posting recipes must be driven crazy by people always making modifications. That being said... I made so much HCC recently that I needed to deal with a huge bowl of leftovers (no avo, I knew it wouldn't all be eaten the first day.) I sauté white mushrooms (heart healthy) then add a few scoops of HCC to warm up for a minute. Warm a tortilla, add the magic potion and slices of fresh avo and salsa/sriracha/hot peppers and set myself FREE!!!

I've made this a number of times from different recipes for different occasions. You're right that people go crazy for it. I have to say that your recipe is the best so far. The proportions are right, it's beautiful in the bowl and your dressing is over the top. I made it for my daughter's birthday party in Phoenix last month and it was gone in a heartbeat. This is without a doubt one of my family's all time favorites!!  I am constantly being asked to make it for family gatherings. Forgot to take a picture when I made this yesterday for our opening of the deck party season. Love this healthier Cowboy Caviar recipe and have made it several times in the past. If I have any leftovers we eat them over a green salad the next day. Delicious with corn chips as well. One substitution that I made was using local green onions from the Farmer's Market instead of the red onions. I love your blog and have made many of your recipes; keep up the great work!

I love your fresh Mexican recipes!  There is so much color and flavor in each bite--red onions, cilantro, corn, tomato, black beans.  Ugh, can't get enough!  In addition, I made some baked sweet potato chips to scoop up the caviar, and it added a really sweet taste to the dish. Five stars!

Definitely a crowd pleaser, and I can eat on it for days. I often make it with a can of hominy in addition to or as a replacement for corn.

Cowboy Salsa

can black beans

can pinto beans (, (or 2 cans if you want more bean), drained and rinsed)

corn (, drained)

Roma tomatoes (, diced)

sweet onion (, diced)

avocados (, peeled,

cilantro

limes

sea salt (,

In a large bowl combine beans, corn, tomatoes, and onion.&nbsp;

Fold in avocados and cilantro.&nbsp;

Squeeze lime juice into the bowl and add a pinch of sea salt.

&nbsp;Stir to combine. Add more sea salt, to taste.

Cowboy Caviar | Black Eyed Pea Salad

Water

Onion (diced)

Tomatoes (diced)

c chopped cilantro

Jalapeño Peppers (diced)

Apple Cider Vinegar ((use a combo of balsamic & cider

Lemon Juice

Kosher Salt

Ancho Chile Powder ((optional))

Cook black-eyed peas in 2 cups of water for 10 mins at high pressure and let them release pressure naturally. Drain excess water when done.

Meanwhile, diced tomatoes, onions, jalapeños and cilantro into even shapes (I used this chopper)

Whisk together all the dressing ingredients.

Once the beans have cooled somewhat, add vegetables and pour in dressing, mix well and taste.

Adjust lemon juice, vinegar, and salt as needed for tangy taste. Resist the urge to over-salt at this juncture, as the salad will get saltier as it melds.

Allow salad to rest for 1 hour or so, before serving at room temperature.

This Cowboy Caviar recipe is adapted from The Well Plated Cookbook by Erin Clarke. Served with tortilla chips, it&#x27;s a fantastic party appetizer, but it&#x27;s also delicious as a salad. Toss it with greens, or enjoy it on its own.

In a small bowl, whisk together the the vinegar, oil, cumin, cayenne, honey, garlic, salt, and pepper. Pour the dressing over the bean mixture. Fold in the avocado and cilantro, and season to taste.

If time allows, refrigerate for 1 hour to allow the flavors to marry. Serve with tortilla chips.

olive oil (extra virgin)

lime juice

tsp chili powder

salt and pepper

In a large mixing bowl stir together all of the salad ingredients and mix well.

In a small mason jar, add the dressing ingredients, screw on the lid and shake really well to emulsify.

Pour the dressing over the salad ingredients and toss to coat.

Cover and refrigerate for 30 minutes for flavours to develop. Serve cold.

Store covered in the fridge for up to four days.
