Greek Salad Dressing*

Place the onion in a small bowl of ice water and let it soak for at least 5 minutes to tame the flavor. 

In the meantime, combine the cucumber, cherry tomatoes, optional feta, and herbs in a medium serving bowl. Once the onions are drained, add them to the bowl. Drizzle the dressing over the salad and toss to combine.

For best flavor, let the salad rest for at least 10 minutes before serving. This salad keeps well in the refrigerator, covered, for up to 4 days.

I made this and liked it very much.  It wasn't all lettuce-y or oil soaked or drippy.  I debated leaving out the feta cheese, as that's not a cheese I particularly like.  But wow, when I added it, there was the salt punch and the something else - like a big oomph of fillingness - that the salad needed. Great recipe.

This was exactly what I was looking for to go with the Cod I was cooking last night. I added 2 ingredients: a yellow pepper and a handful of Spring Greens. I skipped the feta just because I thought the fish would do just fine without it. I also used Cookie and Kate's Greek Salad Dressing. 

It was yummy and a lovely summer meal. This will be my go-to Greek Salad recipe.

Thanks for posting this. Was looking for a no oil recipe of this classic and this worked great. Only recommendation would be to eat that same day, or remove dressing for leftovers as it gets over saturated over night.

Smash the Cucumber: 

Cut the cucumber in half lengthwise and rest the flat side on a cutting board. Use a heavy rolling pin or the flat side of a knife to crush the cucumbers, then cut into 1/2&#8243; pieces or chunks. Transfer the cucumber to a fine mesh sieve and mix with a generous pinch of salt; let sit for 15 to 20 minutes, or while you prepare the remaining ingredients.

Make the Dressing: 

add the oil, vinegar, garlic clove, and 1/2 teaspoon of salt to a small jar; seal and shake until emulsified, then set aside.

Combine: 

add the chopped tomatoes to a large bowl, then add in the cucumbers, shallot, and basil. Top with the dressing and black pepper, to taste. Mix well, then place in the fridge for 15 minutes to chill.

Serve: 

season with additional salt and pepper to taste, if necessary. Serve cold; store leftovers in the fridge in an airtight container for up to 3 days.

Easy Tomato Salad

red onion (about 1/2 small red onion)

(12 ounces or 2 cups) cherry tomatoes, halved

balsamic vinegar*

mozzarella ball

First, fill a small bowl with ice water and add the chopped red onion (soaking the onion will tame its intense flavor and make it more crisp). Set aside as you prep the remaining ingredients.

To assemble the salad, spread the tomato wedges over a large serving platter. Drain the onions well, and layer about one-third of the onions on top. Add half of the cherry tomatoes, followed by a layer of any optional additions, followed by another one-third of the onions. Finish with the remaining cherry tomatoes, followed by the remaining onions, and sprinkle the basil all over.

Drizzle the olive oil over the salad, followed by the balsamic vinegar. Sprinkle the salt and several twists of black pepper on top. Serve promptly. This salad is best consumed within a couple of hours, but leftover salad will keep in the refrigerator, covered, for 3 days.

We used a yellow onion because that's what we had, skipped the avocado because it was too bruised, and omitted the cheese because not everyone does dairy. Still turned out fantastic and didn't feel like we were missing anything.

I made this and added the cucumber and peaches thinking it was going to rock.  It was good, but could have been better.  Clearly needed more salt and maybe more onions?  It was bland, but pretty to look at.  I do love your other recipes.

I made this beautiful recipe this past weekend for my family cookout. I made it with colorful tomatoes and some tomatoes from my garden. I also have some cucumber from my garden and added those. What a wonderful flavorful recipe. I Love the Balsamic recommended. I have not tried it before and just love the flavor! This is a keeper recipe for sure!! My family loved it too! I will be trying peaches in it too soon. It is a very versatile recipe and so very easy!

This is a traditional european recipe which is superb &amp; a firm favourite. We also like sliced cucumbers on a mandolin or finely with a knife, sliced red or white onions, dill &amp; Yoghurt.Fresh dill is best but we chop it &amp; freeze it for scattering on new potatoes with butter, salads or soups. Husband loves parsley so we chop &amp; freeze that as well.

Mediterranean Cucumber Tomato Salad

cherry tomatoes ((about 13 ounces))

kalamata olives ((3 ounces))

pita bread pockets

Preheat oven to 350 degrees.

To make the pita toasts, cut each pita bread pocket in half, then cut each half into 5 or 6 triangles. Repeat for the second pita pocket.

Line a sheet pan with parchment paper.

Tear each pita triangle in half where the bread connects.

Spread out the triangles on the sheet pan with the inside of the pita face up.

In a small bowl, combine the olive oil, salt, and ground sumac.

Use a pastry brush to brush each triangle with a little bit of the oil mixture.

Put sheet pan into the oven and bake for 10-12 minutes, or until the pita toasts are lightly browned and crisp. Set aside to cool.

To start the salad, slice each cherry tomato in half.

Cut cucumbers lengthwise into quarters, then slice into 1/2-inch chunks.

Peel onion, and chop finely.

Slice olives in half.

To make the dressing, whisk together red wine vinegar, olive oil, salt, and pepper.

Put the tomatoes, cucumbers, onions, and olives into a large bowl, then add half of the dressing.

Stir together, and add more dressing as needed.

Crumble feta cheese over the salad and stir again.

Serve with pita toasts.
