Anchovy, acciuga, alice is a very versatile fish. Fresh anchovies baked with spinach, radicchio and ricotta make this anchovy pie a colorful and tasty main dish. 

Anchovy Pie

all purpose flour

1STICK butter, softened

ricotta cheese

2OZ. red radicchio

2TBSP. milk

2TBSP. cream

2TBSP. mustard

spinach

anchovies

salt

Place the flour in a bowl with the softened butter and a pinch of salt and knead it with your hands. Add 1/4 cup water and continue kneading to obtain a smooth and elastic shortcrust dough. Cover with plastic wrap and place in the refrigerator for at least 2 hours to help it become more elastic and easier to roll out.

Clean the anchovies: remove the heads, slice them open like a book and remove the guts and scales, including the tail.&nbsp;

Mix the egg yolks, cream, milk and mustard for a sauce.

Clean and coarsely chop the radicchio. Spoon the ricotta into the pan in large dollops, then add the radicchio, anchovies and spinach and sprinkle with the sauce. Bake in a convection oven for 45 minutes. Remove from the oven and serve hot.

La Quiche Lorraine con pancetta e uova è una torta salata dalla consistenza croccante con all’interno una ricca farcitura. Gli ingredienti, semplici ma gustosi, si assicurano ad ogni morso un’esplosione di sapore.

Quiche Lorraine con pancetta e uova

rotolo di pasta brisèe

300 ml di panna

60 g di provolone grattugiato

g di Grana Padano grattugiato

g di pancetta affumicata

tuorli

uova

noce moscata qb

sale e pepe q.b.

Rosolate la pancetta tagliata a striscioline per qualche minuto in padella antiaderente.

In una ciotola mettete la panna, i tuorli, le uova intere, un pizzico di noce moscata, sale e pepe.

Usando la frusta elettrica lavorate il composto finché non diventa omogeneo e spumoso.

Aggiungete la pancetta, il provolone e il Grana grattugiato. Mescolate con una spatola, coprite e mettete in frigo per un’oretta.

Rivestite la teglia rotonda antiaderente con la pasta brisèe sopra la carta da forno e bucherellate la pasta con la forchetta.

Versate il composto dentro la pasta brisèe e ripiegate leggermente i bordi della pasta verso l’interno. Cuocete in forno preriscaldato a 180° per 20 - 25 minuti.

La crema di parmigiano è una salsa preparata come una besciamella ma arricchita con parmigiano grattugiato: ecco la ricetta.

Fate scaldare il latte senza portarlo a bollore. Nel frattempo sciogliete il burro in un pentolino e aggiungete la farina: mescolate con una frusta e amalgamate. Versate il latte caldo e continuate a mescolare per evitare la formazione di grumi. Fate addensare, mescolando, a fuoco basso.



Togliete dal fuoco e aggiungete il parmigiano grattugiato. Mescolate velocemente per far sciogliere il formaggio. Potete regolare la densità della crema facendola restare per meno tempo sul fuoco.

Come si conserva la crema di parmigiano?
Una volta raffreddata completamente potete conservare la crema di parmigiano in frigo per un massimo di 2 giorni. Prestate attenzione a chiuderla però in un contenitore ermetico per evitare che assorba gli odori del frigo. Per ottenere un composto fluido basterà tirarla fuori dal frigo e scaldarla leggermente in un pentolino.

Crema di parmigiano: variante

Boil the broccoli florets in salted water for 4-5 minutes, then drain, cool in cold water and chop. Cut the guanciale into strips, fry in a dry pan on high heat for a couple minutes, so they brown and release their aroma.

Cut the Camembert into a cubes, without removing the rind. Beat the eggs with the cream, a little grated nutmeg and a pinch of salt and pepper. Line a baking pan (diam. 9 1/2 inches, h. 2 1/3 inches) with parchment paper, then with a round sheet of puff pastry, letting the extra dough hang over the sides.

Add the broccoli, Camembert and guanciale, then pour the eggs over and dust with grated Grana Padano cheese.

Bake the tart at 350 °F for 40 minutes, then remove from the oven, wait 10 minutes and serve.

This savory basil tart topped with robiola cheese, peak season tomatoes and basil is the perfect appetizer or light meal. 

Basil Tart With Fresh Cheese and Roasted Tomatoes

1 1/3CUP all-purpose flour

1/2CUP unsalted butter, softened

For the dough: Purée 30 basil leaves with 1/4 cup water. Dissolve 1 tsp. salt in 1 Tbsp. water. Mix the softened butter with the flour, the dissolved salt and water, and basil leaf purée. Knead until you have a soft dough. Wrap in plastic wrap and refrigerate for around 30 minutes.

Preheat the oven to 320 °F. Blanch the tomatoes in boiling water. Peel them, cut into quarters, and remove the seeds; arrange on a baking sheet covered with parchment paper. Dress with a drizzle of oil, basil and coarse salt and roast for 30-40 minutes. Remove the tomatoes and increase the oven temperature to 350 °F.

Roll out the dough to around 1/8" thick. Butter and flour a 8 1/2" baking dish and line with the dough. Cover with parchment paper, fill with dried beans and bake at 350 °F for 13-15 minutes (blind baking). Remove the beans and bake for another 10 minutes; remove the tart from the oven and let cool.

Mix the robiola cheese with 3 chopped basil leaves and spread on the tart. Top with the roasted tomato petals, arranging them in a sunburst pattern. Garnish with basil leaves and serve.

Stracchino and Agretti Tartlets

1 3/4CUPS flour

9OZ. stracchino cheese

7OZ. agretti (salsola soda

2/3CUP unsalted butter, softened

1/4CUP milk

Combine the flour, butter, 3/4 cup Grana Padano, and a pinch of salt and knead until a crumbly mixture forms; add the egg and continue kneading until smooth and compact. Roll dough in parchment paper, then plastic wrap, and refrigerate for 1 hour.

Combine the stracchino cheese, a drizzle of oil, a pinch of salt, a grind of pepper, the lemon zest, and the milk. Stir until smooth and creamy.

Peel and thinly slice the onion. Chop the agretti. Cook the onion in a frying pan with a drizzle of oil for 1-2 minutes until translucent, then add the agretti and sauté for a further 1-2 minutes, season with salt, and turn off the heat. Complete with 2 Tbsp. Grana Padano.

Preheat the oven to 340°F. Roll out the dough to 1/16” thick and use to line 8 tartlet tins (3” diameter, 3/4” deep). Prick the bases with a fork, then divide the agretti between the tins and top with the stracchino mixture. Bake for 10 minutes, then cover the tartlets with aluminum foil and bake for another 8 minutes. Remove from the oven and from the tins, then return to the oven for another 2 minutes. Remove again and allow to cool before serving.

● La schiacciata alle cipolle è super facile e velocissima da preparare, per prima cosa sbucciate le cipolle e tagliatele a fettine molto sottili.

● In una ciotola mettete la farina, il parmigiano grattugiato, sale, pepe nero, spezie a piacere (io ho messo rosmarino, timo e salvia) e mescolate con una forchetta. Aggiungete l'acqua a temperatura ambiente, l'olio extra vergine di oliva e fate amalgamare per bene tutti gli ingredienti, dovrete ottenere una sorta di pastella senza grumi.
