This is a thick, spicy, sweet red chilli paste that is a fundamental ingredient in Korean cooking.

How To: Make Gochujang

water

brown sugar

200 g miso paste

150 g korean red pepper flakes (gochugaru)

tbsp rice vinegar

salt

garlic

tbsp sesame oil

Melt sugar and add miso.
In a saucepan, melt the sugar into the water over medium heat.&nbsp; Once sugar dissolves, turn to low heat and add miso paste.&nbsp; Stir to combine.



Add chilli powder.
After miso is dissolved (creamy and no lumps), add chilli powder gradually and continue stirring to evenly incorporate them.



Add remaining seasonings and form paste.
Add rice vinegar, salt, garlic and sesame oil into the mixture.

Continue stirring until a paste is formed.&nbsp; Turn off heat.

Spicy cauliflower & halloumi rice

cauliflower (500 grams), broken into medium florets

baby spinach

tbsp rapeseed oil

red onion, sliced

halloumi,

garlic clove, crushed

thumb-sized piece ginger, finely grated

tsp turmeric

tbsp medium curry powder

pouches brown basmati rice

red chilli,

Bring a large pan of salted water to the boil and cook the cauliflower for 5 mins over a high heat, adding the spinach for the final 2 mins. Drain and set aside.

Heat the oil in a large frying pan or shallow casserole dish and fry the onion over a medium heat for 5 mins. Turn up the heat, add the halloumi, cook for a further 5 mins, then add the garlic, ginger, turmeric and curry powder, and cook for 1 min more. Stir through the rice, cauliflower and spinach to warm everything through, adding 1 tbsp water if it looks a little dry. Season and scatter over the chilli.

You see, the floral sweetness of maple melting into doughy bun batter is the thing that makes this cult breakfast burger so loved. But that’s not complete though, you’ll need to whip up (very easily), the egg and sausage patty combo for the inside.  

How to Make McDonald’s Inspired Griddled Maple-Flavoured Pancake Buns

flour

½ tsp baking powder

vanilla essence

tbsp sugar

milk

tbsp butter

maple syrup

Making the maple syrup bits.
In a pot over medium heat, add maple syrup and allow it to form bubbles. Make sure there are bubbles if not it means that it is not hot enough.&nbsp;
Once you start to see big bubbles, stir once and leave it to continue boiling for about 10 mins (or if you have candy thermometer, leave it to about 127°c)
Remove from pan and carefully pour it on a baking tray lined with baking paper.
Using a spatula spread the maple syrup mixture well. Set aside.
Once the syrup is hardened. Break it into small pieces. Set aside.



Making the pancake batter.
In a bowl, add flour, baking powder, milk, vanilla essence, eggs, sugar and pinch of salt. Whisk all ingredients. Set aside for 15 minutes.



Cooking the griddled pancake buns.
Heat up a pan and add 1 tbsp of butter.
Grease a little bit of butter on the inside of a ring mould.
Place the ring mould on the centre of the pan and leave it to heat up a bit.
Using a ladle, add pancake batter into the round ring mould about half way of the ring mould.
Add few pieces of maple crystals into it. Top with a spoonful more of pancake batter.
Leave to bubble before carefully flipping it over.
Let it cook for another 2-4 minutes until the sides brown a little.
Remove from pan and place it on a plate for immediate use with an egg and sausage patty combo

250 g bee hoon (rice vermicelli),

prawns

squids (trimmed &

onion

eggs (beaten)

garlic (minced)

bean sprouts

spring onion (cut in 10 cm lengths)

tsp white pepper

tbsp fish sauce

tbsp shaoxing wine

fish broth

vegetable oil

Fry ingredients.
Heat up vegetable oil in a wok over high heat.
Add sliced onions and garlic, and saute.
Add prawns and cook until slightly pink.
Add the chye sim stalks and spring onion sections and saute.
Add the soaked bee hoon and squid and toss together.



Season the noodles.
Pour in the fish sauce, sugar, shaoxing wine, white pepper and half the fish stock and stir.
Allow the noodles to simmer and absorb the liquid. Add more fish stock if needed.
Push the noodles aside, and pour in the beaten eggs. Scramble and stir to combine.

You can’t go wrong with this crispy deep fried snack which consists of minced meat and vegetables stuffed into bite-sized golden brown spring rolls. Dip it in chili sauce or banana ketchup for the ultimate addictive party snack that tastes super heavenly when served hot!

Lumpiang Shanghai

pcs spring roll wrapper

g sweet chilli sauce (or banana ketchup)

lumpiang filling:1 kg ground pork

eggs

carrots

scallions (finely chopped)

g cabbage (thinly sliced)

tsp salt

tsp black pepper

cornstarch slurry:2 tbsp water

cornstarch

Make the filling.
In a bowl, combine the ground pork, garlic, onion, scallions, cabbage, carrots, salt, pepper, eggs and mix until well combined.



Assemble and fill the spring rolls.
Make a cornstarch slurry by mixing 2tbsp water and 2tbsp cornstarch.
Fill the spring rolls with the filling and roll them tightly.
Seal it with cornstarch slurry.



Deep fry the spring rolls.
Heat oil in a pan and deep fry the spring rolls until it is cooked and the wrapper is golden brown.
Place it on a serving dish

Sambal Udang Petai

tamarind juice (mix tamarind pulp with hot water & strain)

tbsp palm sugar (gula melaka)

bitter bean or stink bean (petai), peeled

½ kg medium-sized prawns (shelled)

salt (to taste)

chilli paste ingredients:10 shallots (peeled)

chillies

shrimp paste (belacan)

Fry petai.
Heat cooking oil in a wok, add paste and stir-fry till fragrant and oil begins to float on the surface.
Add in bitter beans (Petai) and fresh prawns. Then pour in the tamarind juice and palm sugar.&nbsp;
Cook for several minutes, add salt to taste and water to prevent burning.
Dish onto a serving plate when Prawns are cooked.

Thai Green Papaya Salad with Beef

lemon

soy sauce

lemongrass (finely chopped)

tbsp ginger (roughly chopped)

peanut butter

red chili pepper

tbsp sriracha

beef steak ingredients:1 beef steak

green papayas (shredded)

carrots (shredded)

cucumbers (shredded)

coriander

red hot chillies (optional)

Make salad dressing.
Place all the dressing ingredients in a blender and mix till smooth.&nbsp;
Taste and adjust the consistency to your liking.&nbsp;
Put aside for later. 



Cook the steak.
Add some sesame oil on a hot skillet and place the steak forafew minutes on each side till it gets nice grilling marks,which adds to the taste.&nbsp;
Slice and put aside.
In a mixing bowl, add the carrots, cucumber, papaya and ½ cup dressing. Mix well.

Chicken Parm Bowl

Good Culture cottage cheese

Rao’s marinara sauce

mozzarella cheese

Italian seasoning

Garlic powder

Into a bowl combine all ingredients except the chicken nuggets.

Stir and microwave on high for one minute, stirring halfway.

Cut chicken into small pieces.

Add chicken to the bowl, stir and microwave on high for 30 seconds or until mozzarella is melted.

Enjoy!!

I’ve made this twice now. I use a little less cottage cheese and a little more sauce and it’s perfect! I also make my chicken chunks from scratch since I’m keto. (Chicken breast cut into 1 inch cubes, throw in a bowl with 1 egg and then toss in pork rind crumbs and air fry!)
