Irresistible Butterball Cookies! They're sandwiched together with seedless raspberry jam and rolled in aromatic vanilla sugar for a sparkly appeal.

Butterball Cookies

unsalted butter (softened)

sugar

all-purpose flour

raspberry jam

Using a mixer fitted with a whisk attachment, beat the butter on medium speed for about 3 to 5 minutes until the butter is light and fluffy. Mix in the sugar until well blended then add in the flour and continue mixing until the dough is formed. Wrap the dough with saran wrap and chill the dough for about 3 hours. Chilling the dough will prevent the cookies from spreading out too much when baked.

Preheat the oven to 375*F.

Use a small spoon to tear out small pieces of dough and use the palm of your hands to roll them out into small balls about the size of a hazelnut. Place them on a cookie sheet and chill them in the freezer for 30 minutes.

Line 3 cookie sheets with parchment paper. Place the cookies 2 inches apart on the prepared cookie sheets (cookies will spread). Bake one sheet at a time for 8 to 10 minutes or just until the cookies are firm and pale golden in colour. Keep the remaining cookie sheets chilled till ready to bake the next batch.

Spread the flat side of half the cookies with the jam and then top with remaining cookies to form a sandwich. Once you have paired them and formed little sandwich cookies, roll them in vanilla sugar to coat all over.

Heat the milk in the saucepan until it comes just up to the boil, then take off the heat immediately. In a bowl, beat together the egg yolks, vanilla sugar and flours. Pour the milk slowly over the egg mix, beating well.

Return the mixture to the pan and place over a low heat, stirring for 8-10 mins until the mixture begins to thicken. Remove and serve with the dumplings.

Pick the cones. I recommend wearing rubber gloves, otherwise it will be difficult to wash your hands. In a saucepan with a thick bottom, fill cones with water, so that it completely covers them. Bring to a boil and simmer on low heat for 40 minutes.

2. Stage

Leave the cones in this <a href="https://www.master-recipes.com/en/ingredient/decoction" title="decoction">decoction</a> for 12-14 hours.

3. Stage

Cones set aside separately, drain the broth.

4. Stage

Pour the sugar, vanilla <a href="https://www.master-recipes.com/en/ingredient/sugar" title="sugar">sugar</a> and cinnamon into the syrup. Cook over low heat for 1.5 hours.

5. Stage

At the end of boiling, the <a href="https://www.master-recipes.com/en/ingredient/syrup" title="syrup">syrup</a> will take on a beautiful reddish color.

Fifteen minutes before the end of cooking, return the cones to the pot and finish the jam.

HOW TO MAKE FLAVORED SUGAR – (4 Flavors)

Mix the ground vanilla powder together with the sugar and store in an airtight container (preferably glass).

Mix the cinnamon and sugar together and store in an airtight container (preferably glass).

Make the Cinnamon Sugar

Peel the fruit and remove the zest. Discard the pith (the white part). Transfer it to a food processor together with the sugar.

Pulse it for a few minutes until the zest is finely ground. It should be a light, pale yellow/orange and very moist.

Line a baking pan with parchment paper, making sure there’s overlapping paper on each side of the pan. This will make it easier to use as handles to lift it off the pan.

Evenly spread the mixture on the parchment paper and let it dry at room temperature for about 1 hour.

Break up any clumps by rubbing them between your fingers.

Lift the parchment paper and pour the citrus sugar in an airtight container (preferably glass).

Homemade Vanilla Sugar

Place sugar into an airtight container.

Bruise each vanilla pod by bending and twisting the vanilla pod with your hands.

Open the vanilla bean with a knife by splitting it down the middle.

Scrape out some of the vanilla seeds by running the back of the knife down the inside of the vanilla bean pod. Cut the pod into smaller pieces.

Place the vanilla bean pod pieces and seeds into the container with the sugar. Stir thoroughly.

Place the lid onto the container and shake.

Shake the container every day for a couple of weeks.

The vanilla sugar is done when the sugar isn&#039;t white anymore. It will be a lovely off white color with lots of specs of vanilla beans throughout.

Could I use powdered vanilla instead of vanilla beans?   It is ground vanilla beans only, nothing else. It was costly but worth the investment.

One of the luxuries in my kitchen is a product called Truffle &amp; Salt.  It's a salt product we sell a Williams-Sonoma.  It is a small bottle, but you only use a pinch.  It's got small bits of shaved black truffle in it and when you open the jar you are transported to an oak tree in France or Italy with either a snorting pig or a dog sniffing out the prized fungi next to you.  The small bottle is $28, but as an employee it's one of the things I revel in my discount for.  As a matter of fact, I need to make dinner and think a bowl of pasta and some roasted asparagus with Truffle &amp; Salt is the answer!  :)
