The best Vegan Blueberry Crisp made with frozen blueberries and covered in a chewy, crunchy oat topping. Easy to make, gluten-free, and delicious. Perfect for breakfast or dessert.

Best Vegan Blueberry Crisp (Easy, Gluten-Free)

lbs. frozen blueberries

maple syrup

lemon juice

water

vanilla extract

cinnamon

corn starch

oats

almond flour

dark brown sugar

walnuts

salt

applesauce

To a large mixing bowl add all the filling ingredients (blueberries, maple syrup, lemon juice, water, vanilla, cinnamon, and cornstarch). Mix until everything is well combined and evenly coated. Transfer the mixture 9&#215;13 baking dish (affiliate link).

Add the topping ingredients (oats, almond flour, brown sugar, cinnamon, nuts, maple syrup, and applesauce) to another bowl and stir. Make sure everything is mixed well. Use your hands if you have to.

Spread the crumble topping with your hands evenly on top of the blueberry filling. Place in the oven and bake uncovered for 45-55 minutes until the filling is bubbling and the topping is lightly browned.

We are having company over on Saturday night. I'm going to make this! It looks so yummy! I'll report back on how we liked it.

This was seriously one of the best ever crisps we have had.
Forgot the add the nuts, yet it was still wonderfully chewy, sticky, sweet and crunchy.
Served with a scoop of Oatley vanilla ice cream and somehow we managed to save some for next day.

I made this once before and it was a great hit. Making it again for Easter. I followed your recipe exactly. I am wondering if the sugar could be decreased a little? I wouldn’t ordinarily eat something this sweet, but definitely for special occasions! I’m afraid to reduce it on my own because I don’t want to mess it up!

Excellent dessert!!!  I used maple sugar instead of brown sugar. I halved the recipe since it's just me, turned out great!!!

Shane , can I omit the cinnamon? I want to make this for a group that includes someone with a cinnamon allergy. Maybe use a little fresh ground nutmeg?

I also have a cinnamon allergy, I subbed ground ginger.

Really tasty, I used a mixture of blueberries and strawberries.  I found this worked out better in a 9X9 baking dish, the 9X13 made it really thin.  I tried an online converter for pounds to cups for the berries, maybe I didn't use enough.  Anyway, it was really good.

Another fantastic recipe, Shane! Used a 1 lb bag of blueberries and a 1 lb bag of mixed berries and light brown sugar instead of dark (it's what I had on hand).  I also just dumped the topping in spoonfuls on the top, and those little browned clusters were heavenly. My non-vegan friends loved it and didn't miss all the butter this recipe usually has. Next time I think I might try to put some crushed pineapple in it like the dump cakes use because this recipe is what that reminds me of - it's that good!

This was so yummy!!! I was asked to bring dessert to a dinner with omnivores and I was a bit anxious. I turned to Shane for help and searched the site. This looked perfect and easy, and it was exactly that. I was surprised at how crispy the topping turned out. Perfect ratio of tender, fat, sweet bloobs to sweet crispy topping. Everyone loved it. I begged the hosts to keep it, but they only kept some. As I had feared, (since I know myself) I ate the leftovers for breakfast the next morning. What was clearly more than one serving became one giant delicious breakfast. Oh, well, I told myself I had lots of antioxidants to ease my guilt. I will be making this again and making sure I don't keep any leftovers. Thanks!

This gluten-free and vegan, healthy blueberry crisp is easy to make, oil-free, and perfect for Summer!

Blueberry Crisp

blueberries (760 g)

cornstarch (5 g)

lemon juice (5 ml)

rolled oats (90 g)

oat flour (50 g)

TB maple syrup (30 ml)

applesauce (65 g)

cinnamon (2. 5 g)

tsp vanilla (5 ml)

Preheat oven to 350. Spray a 9” square baking dish or 9” pie plate with cooking spray.

Toss blueberries with cornstarch and lemon juice and add to the baking dish.

Combine all topping ingredients in a medium mixing bowl and combine well.

Sprinkle topping mixture evenly over blueberries. It likes to clump up in the bowl so make sure to break it up as you add it to the dish.

Bake for 35-40 minutes, until the topping is browned and the berries begin to bubble around the edges.

Let rest/cool for 15-20 minutes before serving, to allow time for thickening.

I used frozen blueberries with a little extra cornstarch and it was great thanks!

Tasty recipe! But cringing over the use of imperial system. I can't wait til the three countries who use imperial finally switch over, I literally promise you that your lives will be so much easier when you don't have to measure in pints of all things. ½ tbsp corn starch

tbsp sugar

lemon

oat flour ((gluten-free if needed))

sugar

almonds,

+ 1 tbsp melted coconut oil

Pre-heat oven to 350ºF (180ºC).

Prepare the blueberry filling by adding all of the ingredients into a bakin dish - blueberries, corn starch, sugar, lemon juice and lemon zest. Mix well.

To make the crisp topping, mix the dry ingredients to a bowl- oat flour, roleld oats, sugar, chopped almonds and salt.

Next, add melted coconut oil and mix once more, until everything is well coated.

Top the bluebery filling. Bake for 35-40 minutes or until top is golden.

Let cool for at least 20 minutes before serving.

The BEST Blueberry Crisp (Vegan, Healthy, Perfect!)

This mouthwatering Blueberry Crisp is so easy to make with fresh or frozen blueberries! Ripe, juicy blueberries are baked to perfection beneath a warm topping that’s made with sweet, buttery oats.

Easy Blueberry Crisp

all purpose flour

brown sugar

butter, melted (I used Miyoko's plant butter)

Preheat the oven to 350 degrees F and spray a 9 inch square or larger baking dish (I used a 8x11) with non-stick spray. You can use a pie pan, square or oval. A cast iron pan will also work!

Add the blueberries to the prepared baking dish, along with the sugar, flour and lemon juice. Stir right in the pan until combined pretty well.

In a medium sized bowl, mix the flour, oats, brown sugar, cinnamon and salt together, then mix in the melted butter.

Using your hands, evenly sprinkle the topping on the blueberries. I like to form some larger chunks as I sprinkle it on which makes for delicious crunchy clusters after baking!

Bake for 35-40 minutes until the topping is golden and the blueberries are bubbling. Serve with vanilla ice cream (I used cashew based vanilla ice cream), if desired and enjoy!
