This quick and healthy Jamaican Jerk flavored cauliflower taco recipe is are easy to pull together and is completely meat-free, soy-free, and can be made gluten-free by using GF tortillas.

Vegan Jamaican Jerk Cauliflower Tacos with Avocado Lime Crema

Head Cauliflower (Medium to Large.)

c All Natural Jerk Sauce (See notes

c Onion (I use Sweet Vidalia Onion for everything :))

carrot

c Baby Spinach

Corn tortillas (or any other vegan or GF brand)

tbsp Garlic Powder

tsp Smoked Paprika (regular Paprika is fine, too.)

¼ tbsp Cayenne Pepper Powder

tbsp Organic Sugar (I use Organic Coconut

tsp Allspice

tbsp Cinnamon

tbsp Nutmeg

Parsley

Thyme,

Avocado (Whole or Pieces. Soaked and drained. SEE NOTES.)

c Dairy-Free Milk, Unsweetened

c Lime Juice, Fresh Squeezed (1 Medium lime)

c Cilantro, Fresh (Chopped)

Clove Garlic, Whole Clove

tsp Onion Powder

Heat the oven to 400°

Toss the cauliflower in a bowl with 1tbsp of the oil. Add Jerk sauce OR jerk seasoning and mix to coat the cauliflower.

Place cauliflower on a sheet pan lined with parchment or coconut oil cooking spray.

Bake 20 minutes (until tender and golden brown), stirring after about halfway through.

For the Jerk Cauliflower

In a frying pan, heat 1tbsp of the oil and saute the onions and carrots for 3-5 minutes or until they start to brown then add spinach and further cook just until the spinach begins to wilt. *Add more oil or a bit of water if necessary.

Place the mixture in a medium mixing bowl and set aside.

Spinach and Carrot Mixture

Blend or pulse all of the ingredients (except salt and pepper) until smooth and creamy.

Add salt and pepper to taste.

Avocado Lime Crema

Warm the corn tortillas in the pre-heated oven for1-2 minutes.

Toss the spinach mixture with some of the avocado lime crema and add a layer on each tortilla.

Add a portion of the jerk cauliflower to each tortilla and chow down.

Assemble

This vegan macaroni salad is easy to make and comes together in less than 30 minutes! Elbow macaroni is combined with crunchy veggies and tangy pickles and tossed in a creamy vegan mayo sauce.

Best Vegan Macaroni Salad

elbow macaroni

carrot,

dill pickles, finely diced

red onion, finely diced

vegan mayo

cashew crema

yellow mustard

dill pickle juice

Salt & pepper

Bring some water to a boil in a large pot. Once boiling, salt the water and cook the macaroni according to the package directions, or until al dente. Immediately drain and rinse the pasta under cold water.

In the meantime, shred the carrots and dice the celery, pickles, and onion. Add them to a mixing bowl with the drained macaroni.

Mix the mayo, crema, mustard, and pickle juice together in a small bowl. Add the sauce to the macaroni salad, then season with salt and pepper to taste. Happy eating!

When you think of Mexican food, what comes to mind? I picture a delicious dish topped with a dollop of cream. It&#039;s a common finishing touch on enchiladas, quesadillas, and tacos—Mexican crema. That&#039;s why I decided to create my own vegan version of Mexican crema.

Mexican vegan crema

Blend all of the ingredients. If you need extra liquid, add one or 2 tablespoons of water.
