This Healthy Peanut Butter Granola Recipe is the perfect make-ahead breakfast! This easy homemade granola recipe is made with only 6 ingredients in 30 minutes! Plus it's gluten-free, dairy-free, refined sugar free, oil free and vegan!&nbsp;

Healthy Peanut Butter Granola

old-fashioned (or quick cooking oats*)

cinnamon

sea salt

peanut butter

honey

½ tsp pure vanilla extract

Preheat oven to 325 degrees F. Grease a large cookie sheet and set aside.

In a small bowl, mix together oats, salt and cinnamon. Set aside

In a microwave safe dish or on the stovetop, melt the peanut butter and honey (or maple syrup) together until smooth.

Remove from heat and stir in vanilla.

Stir in dry ingredients and mix until well combined.

Spread mixture on prepared cookie sheet.

Bake in the preheated oven for 15-20 minutes, or until granola is lightly browned, stirring the granola once gently half way through. (A great way to test for doneness is to remove a small portion of the granola from the pan and set it on the counter. If it hardens as it cools the rest of the granola is done)!

Remove from oven and let sit until cooled.

Once cooled, break apart and eat!

Peanut Butter Granola

An easy-to-make vegan, gluten-free granola made oil-free thanks to aquafaba! Just 9 ingredients and simple methods required. A delicious, naturally sweetened breakfast or snack!

Aquafaba Granola (Oil-Free!)

gluten-free rolled oats*

raw nuts (pecans / slivered almonds)

coconut (unsweetened)

Tbsp chia seeds

coconut sugar (or other dry sweetener of choice)

tsp sea salt

tsp cinnamon

aquafaba

maple syrup,

tsp vanilla extract ((optional))

blueberries

Dairy-free milk

fruit ((banana, berries, etc.))

Preheat oven to 325 degrees F (162 C) and line one baking sheet (or more as needed) with parchment paper.

To a large mixing bowl, add the oats, nuts, coconut, chia seeds, coconut sugar, salt, and cinnamon. Stir to combine.

Add aquafaba (chickpea brine) to a mixing bowl and use an electric mixer to whip into loose peaks (see photo). This can take up to 10 minutes, usually 5. (If it has trouble blending, add a little cream of tartar to help peaks form.)

Add maple syrup and vanilla (optional) to the aquafaba and beat for 30 seconds more. Pour the aquafaba mixture over the dry ingredients and fold to coat (see photo).

Spread the mixture evenly onto a parchment-lined baking sheet(s) and bake for 28-35 minutes (or until fragrant and deep golden brown). Stir a bit near the halfway point and flip the pan around to ensure even baking.

Let cool completely. Then add dried fruit (optional) and toss. Place in a container that has an airtight seal and it should keep for 2-3 weeks at room temperature. Store in the freezer up to 3 months (sometimes longer).

Vegan granola, packed full of nuts and seeds.

Vegan Granola Base

255 g old fashioned oats (the big flat rolled ones, NOT porridge oats)

flour

cinnamon (ground)

cardamom seeds

tsp sea salt flakes

pecans (chopped roughly)

95 g almonds (I prefer whole

155 ml fruit syrup

tbsp melted coconut oil oil

vanilla bean paste

Preheat the oven to 150c.

In a large bowl mix the oats, flour, cinnamon, cardamom and salt until combined. Add the nuts and seeds and set aside.

In a small bowl, mix the melted oil, syrup and vanilla. Add the wet ingredients to the dry and mix well to combine.

Spread the mixture out evenly onto two baking sheets and bake for 30 minutes, removing from the oven half-way through to break up and stir the granola. (In the second half of the cook time, watch the edges like a hawk and make sure they don’t burn).

Once baked, remove from the oven and allow to cool completely. Once cooled, the granola should be brittle and crunchy. Store in an airtight jar until ready to serve.

This delicious vanilla almond oil-free granola is great for topping yogurt, as a plant-based, homemade cereal or just as its own for a perfectly healthy snack. It is really easy to make as well as being refined sugar-free and gluten-free.

Preheat oven to 300°F. Line a baking sheet with parchment paper.

In a large mixing bowl, combine old-fashioned rolled oats, almonds and chia seeds.

In a separate, glass measuring cup add almond butter and maple syrup. Heat in the microwave for 10-15 seconds then stir until well combined.

To the oats, add in almond butter mixture, almond extract, vanilla extract, cinnamon, nutmeg and salt. Mix everything together thoroughly.

Transfer mixture to a baking sheet and evenly spread out.

Bake for about 35-40 minutes or until golden brown.

Easy Vegan Granola Recipe 

Real Maple Syrup

tsp Vanilla Extract

Salt

Cinnamon

Rolled Oats (not Instant), Gluten-Free if necessary

Pumpkin Seeds

Almonds

Walnuts

Unsweetened Coconut Flakes

Preheat the oven to 325F. Add the Maple Syrup, Nut/Seed Butter, Vanilla Extract, Cinnamon, and Salt to the base of a large bowl. Whisk until evenly incorporated.

Pour the Oats, Pumpkin Seeds, Almonds, and Coconut into the bowl and fold them into the wet mixture, until all pieces are evenly coated. Transfer this mixture to a greased or lined baking tray and press it into a thin, even layer using a spatula.

Bake for 20 minutes on the bottom rack of the oven, then remove and use a spatula to toss/flip the granola. Return to the oven and bake for an additional 6-7 minutes, then remove.

Immediately sprinkle the Chocolate Chips or Dried Fruit over the Granola, using a spatula to gently toss the mixture. If you’d like the Chips to completely melt, stir them a bit more until they melt completely. Let the Granola and Chocolate cool completely on the tray before removing.

Serve as desired; store leftovers at room temperature or in the fridge (recommended for crunchier granola) for up to one month.

I love this recipe, the funny part is, I made it exactly like yours but came up with it on my own through experimentation, I just found yours and your site, what an awesome site. I use gluten free oats and I make my own nut/almond butter and use that. I live in the middle of almond orchards so almonds on the cheap come easy.

I’ve been on the hunt for a good clean granola recipe for so long. I don’t like to buy in stores and I wanted a recipe with very few and REAL ingredients. This one is perfect!!! I made it- so easy and it’s delicious!!!! I’ve been snacking on it all day!!

This is now my go-to granola!! I love it. I usually add about 3/4 of dried fruit (more coconut flakes, dates, and craisins - yum!). Maple syrup is super expensive where I live, so I use honey instead and it's amazing! Thank you for sharing this recipe!!

Awesome granola! I prefer this to all the other (many, many) granola recipes I've made with oil. Granola tastes so much better without oil, I think oil gives it a weird aftertaste. This is better than any store-bought granola I've ever tried! I have a nut allergy so I subbed the nut butter for sunflower butter butter and added chia seeds, sunflower seeds, pepitas, and raisins. I make this so often - it’s one of my favourite recipes! So versatile - I’ve used both 1/3 cup maple syrup and 1/4 cup (more cost effective) and they both yield the same results. Thanks !

This hits the granola spot for me! I used 1/3 of unroasted cashew butter, 1/3 cup agave nectar, cinnamon, vanilla and salt. Then I put more cinnamon because “Duh”! 

I ate some with 1/2 perfectly ripe banana and some soy milk. I added hemp seeds. I’m going to make more, I’ll definitely do a chocolate chia seed granola as well as a peanut butter one. I think I would stick cranberries, hemp seeds, sunflower seeds, and maybe cashews or raisins in this vanilla neutral-tasting granola. 

It’s perfect. Sometimes I just want to eat granola and nothing else with it. This is the kind you can do that with because it will never skimp you on flavor. 

Thanks for a new way for me and my toddler to enjoy our beloved rolled oats! (We buy 6 lbs a month, lol!)

This granola is super easy to make and absolutely delicious. I also like that it is versatile enough to use whatever nuts, etc. I have on hand. It is so good, it is hard to keep it in the house very long. We even find ourselves eating it for dinner sometimes. : ) Thank you for sharing it with us.

This is the recipe I've been looking for. I made it with almond butter and subbed pecans for the almonds. So yummy. I had to make myself stop eating, or I might have eaten the entire batch in one sitting! I can't wait to experiment with other combinations.

Mom's Healthy Date &amp; Coconut Granola

almonds

coconut flakes

pecans (, chopped)

sunflower seeds

tsp cardamom

½ tsp ground ginger

nutmeg

coconut oil

dates ((about 7), chopped)

Preheat oven to 325ºF.

In a large mixing bowl, combine all the oats, nuts, seeds and spices. Stir to combine.

In a small saucepan, add the oil, syrup, honey and peanut butter. Cook on low until everything is melted together. Pour the liquid ingredients over the dry ingredients and stir with a wooden spoon until fully combined and all the dry ingredients are coated.

Spoon the contents of the mixing bowl onto a baking sheet. Bake the granola 35 - 45 minutes, stirring every 10 - 15 minutes, until the granola has browned. Make sure to stir it to avoid burning it.

When the granola has finished baking, stir in the chopped dates.

Cool fully before adding placing in an airtight container. Serve with your choice of milk, yogurt or use as a topping!

Spread out to an even layer again and return to the oven for 5-10 minutes. At this point keep an eye on it as granola can go from perfectly golden brown to burnt rather quickly!
