vegan granola bars

The perfect on-the-go snack – these Vegan Granola Bars are hearty, healthy and completely satisfying. They are easy to make, require simple ingredients, and you don’t even have to bake them!

Vegan Granola Bars

rolled oats ((gluten-free if preferred))

quick oats

puffed rice cereal

almonds

cranberries ((sub raisins, cherries, goji berries, etc.))

sunflower seeds

medjool dates

almond butter ((or preferred nut butter))

maple syrup ((sub agave or coconut nectar))

vanilla extract

cinnamon

non-dairy chocolate chips

Line an 8x8 baking pan with parchment paper and set aside.

In a large mixing bowl, mix the rolled oats, quick oats, puffed rice, cranberries, sunflower seeds and almonds.

Process the dates in a food processor until they are broken down into a sticky paste. Leave the paste in the processor.

In a small pot, over medium-low heat, whisk the almond butter, maple syrup, vanilla extract, and cinnamon together. Heat until the mixture is well combined, softened and slightly runny (1-3 minutes). Stir often to prevent burning.

Now add the warmed mixture to the food processor with the dates. Process until fully combined, scraping down sides as needed.

Pour the almond and date mixture over the dry mixture and combine well using a spatula.

Wait for the mixture to cool for a few minutes before adding the chocolate chips so they don't melt. Stir to combine.

Now evenly spread the mixture into the baking pan. Press down firmly to ensure the bars will hold together. You can use a jar to roll over the mixture as you press down. Firmly press the edges too with a spatula.

Place in the freezer for about 1 hour to firm up. Cut into 12 even bars.

Vegan Chewy Granola Bars Recipe (3 Ways!)

½ cups One Degree Organics Sprouted Quick Oats

cups One Degree Organics Sprouted Brown Rice Crisps

¾ cup nut or seed butter*

liquid sweetener*

coconut sugar

Chocolate Chip: ¼ cup dairy-free mini chocolate chips

dairy-free mini chocolate chips + 3 tablespoons of chopped vegan marshmallows

Preheat the oven to 350F and line a 9×9″ baking tin with parchment paper. Add the oats and rice cereal to a large bowl and mix until evenly combined.

Add the nut butter, liquid sweetener, coconut sugar, and vanilla extract to a separate, smaller bowl. Microwave for 20 – 30 seconds to loosen the mixture, then stir until well-combined. Pour the wet mixture into the bowl of dry ingredients and use a spatula to mix everything together. You may eventually need to use your hands to really get in there.

Fold in any additional toppings or bar flavors, if you are using them. Firmly press the granola bar mixture into the lined baking tin, then bake in the middle rack of the oven for 6 to 8 minutes. Remove the tin from the oven and let cool completely before removing and slicing into bars.

Serve as desired; leftovers will keep in an airtight container at room temperature for up to one week.

Hi! :)
I got one question: Do you use unsalted peanut? Thank you for the delicious recipe!

Taste is great! Instructions were easy to follow. My bars did crumble even after pressing them, putting them in a 8x8 pan, and baking for the full time. I still enjoyed them, but may need more wet ingredients to hold it together. May just use it as cereal instead. :)

These vegan granola bars are soft, fudgy, chewy, and easy to make! They require 9 simple ingredients that magically blend together to create an explosion of flavor. And you can enjoy them without even turning the oven on. Filled with protein, fiber and free from refined sugar, they are the perfect everyday snack or breakfast on the go.

dates ((around 12 Medjool dates), pitted)

water

oats

almond butter

fruits

chia seeds

vanilla powder ((or vanilla extract))

Lightly oil an 8-inch square pan and cover the bottom and the sides with parchment paper. Make sure to leave a bit of excess paper to make it easier to remove the bars from the pan.

Add the pitted dates and 2 tablespoons of water to a food processor and blend until the dates become like a dough-consistency paste (see note 1).

Place the oats, nuts, dry fruits, seeds, vanilla, almond butter, and date paste in a large mixing bowl and mix well.

Transfer the mixture into the pan, and press it firmly using your hands or something flat like a measuring cup or a spatula.

Refrigerate for 1-2 hours or put in the freezer for 30 minutes until set.

Remove from the pan using the extra parchment paper hanging from the sides, and slice into granola bars with a sharp knife into 10 pieces.

These granola bars had great flavor and were not overly sweet like normal granola bars. I used peanut butter, and they did not set up quite as good as I would like, but maybe I just need to bake them longer.

I just made these and they're so good! I stayed true to the recipe for the first try. Held together nice, great texture. Sweet enough but not overly sweet. I'll be making these again for sure.

I used peanut butter and they held together really well.

these were so so good! they held together beautifully. The kids ate the whole batch in one. I halved the sweetener, added a bit of erythritol instead and a dark of milk to keep the consistency without the extra maple syrup. thanks for a great recipe. Healthy and delicious

I made these bars and they were delicious. I added a tsp of chia seeds also.
