The perfect on-the-go snack – these Vegan Granola Bars are hearty, healthy and completely satisfying. They are easy to make, require simple ingredients, and you don’t even have to bake them!

Vegan Granola Bars

rolled oats ((gluten-free if preferred))

quick oats

puffed rice cereal

almonds

cranberries ((sub raisins, cherries, goji berries, etc.))

sunflower seeds

medjool dates

almond butter ((or preferred nut butter))

maple syrup ((sub agave or coconut nectar))

vanilla extract

cinnamon

non-dairy chocolate chips

Line an 8x8 baking pan with parchment paper and set aside.

In a large mixing bowl, mix the rolled oats, quick oats, puffed rice, cranberries, sunflower seeds and almonds.

Process the dates in a food processor until they are broken down into a sticky paste. Leave the paste in the processor.

In a small pot, over medium-low heat, whisk the almond butter, maple syrup, vanilla extract, and cinnamon together. Heat until the mixture is well combined, softened and slightly runny (1-3 minutes). Stir often to prevent burning.

Now add the warmed mixture to the food processor with the dates. Process until fully combined, scraping down sides as needed.

Pour the almond and date mixture over the dry mixture and combine well using a spatula.

Wait for the mixture to cool for a few minutes before adding the chocolate chips so they don&#039;t melt. Stir to combine.

Now evenly spread the mixture into the baking pan. Press down firmly to ensure the bars will hold together. You can use a jar to roll over the mixture as you press down. Firmly press the edges too with a spatula.

Place in the freezer for about 1 hour to firm up. Cut into 12 even bars.

Stir Mixture

Add Ingredients

Remove mixture from heat and stir in the oats, rice cereal, cranberries, pecans, flaked coconut, and sunflower seeds.

Coat Ingredients

Stir until everything is coated in the peanut butter mixture.

Pour Mixture

Pour the mixture into a parchment-lined 9x9 square dish and press down firmly.

Let Cool

Allow bars to cool completely in the fridge before slicing into your bars.

Store Bars

Store your granola bars in an airtight container in the fridge.

Chocolate Chip: ¼ cup dairy-free mini chocolate chips

dairy-free mini chocolate chips + 3 tablespoons of chopped vegan marshmallows

Preheat the oven to 350F and line a 9&#215;9&#8243; baking tin with parchment paper. Add the oats and rice cereal to a large bowl and mix until evenly combined.

Add the nut butter, liquid sweetener, coconut sugar, and vanilla extract to a separate, smaller bowl. Microwave for 20 &#8211; 30 seconds to loosen the mixture, then stir until well-combined. Pour the wet mixture into the bowl of dry ingredients and use a spatula to mix everything together. You may eventually need to use your hands to really get in there.

Fold in any additional toppings or bar flavors, if you are using them. Firmly press the granola bar mixture into the lined baking tin, then bake in the middle rack of the oven for 6 to 8 minutes. Remove the tin from the oven and let cool completely before removing and slicing into bars.

Serve as desired; leftovers will keep in an airtight container at room temperature for up to one week.

Taste is great! Instructions were easy to follow. My bars did crumble even after pressing them, putting them in a 8x8 pan, and baking for the full time. I still enjoyed them, but may need more wet ingredients to hold it together. May just use it as cereal instead. :)

Vegan Granola Bars (Chewy + Healthy)

dates ((around 12 Medjool dates), pitted)

Lightly oil an 8-inch square pan and cover the bottom and the sides with parchment paper. Make sure to leave a bit of excess paper to make it easier to remove the bars from the pan.

Add the pitted dates and 2 tablespoons of water to a food processor and blend until the dates become like a dough-consistency paste (see note 1).

Place the oats, nuts, dry fruits, seeds, vanilla, almond butter, and date paste in a large mixing bowl and mix well.

Transfer the mixture into the pan, and press it firmly using your hands or something flat like a measuring cup or a spatula.

Refrigerate for 1-2 hours or put in the freezer for 30 minutes until set.

Remove from the pan using the extra parchment paper hanging from the sides, and slice into granola bars with a sharp knife into 10 pieces.

Homemade Chewy Granola Bars

To a bowl, add the oats and flaxmeal, and stir until combined. Next, add the peanut butter and maple syrup. Stir until a thick &quot;batter&quot; is formed. 

Gently stir in the chocolate chips and freeze dried strawberries. 

Line a baking sheet with parchment paper, and transfer the batter to it. Using the bottom of a mug or another pan, pat the batter down until completely firm and evenly dispersed in the pan.

Refrigerate for one hour to set. Once set, remove from the pan with the parchment paper, and slice into 24 pieces. Store the bars in a sealed container in the fridge for up to 5 days or longer.

You can watch the video in the post for visual instructions.Line a baking pan (mine was 7x7 resp. 18x18 cm) with parchment paper and preheat the oven to 350 °F (175 °C).

Meanwhile, prepare the flax egg by combining the ground flax seeds and water in a small bowl, mixing well, and setting it aside for 5 minutes.

Add all dry ingredients to a bowl and stir to combine.

Add in the wet ingredients (also the flax egg) and mix thoroughly.

Transfer the mixture evenly to the lined pan and press it down firmly using a spatula.

Bake for about 25 minutes, then let cool completely, slice into bars and enjoy!

These granola bars had great flavor and were not overly sweet like normal granola bars. I used peanut butter, and they did not set up quite as good as I would like, but maybe I just need to bake them longer.

I just made these and they're so good! I stayed true to the recipe for the first try. Held together nice, great texture. Sweet enough but not overly sweet. I'll be making these again for sure.
