This Cardamom Apple Rice Pudding is vegan, gluten free, and soy free! It also can be made nut free by replacing the almond milk with an alternative plant-based milk. This dish is Vata-pacifying and can be Pitta-pacifying by replacing the nutmeg and cardamom with fennel powder.

Cardamom Apple Rice Pudding (Vegan, Gluten Free, Vata pacifying)

White Rice

tsp Unrefined Cane Sugar

Apples (Peeled and grated)

+ 2 tbsp unsweetened Almond Milk

Nutmeg

tsp Cinnamon

tsp Cardamom

Water

Pour all ingredients except the cardamom in a pot on low-medium heat. Cover slightly off center with a lid to let off a little steam.

Cook until desired consistency. It will become creamy in about 30-40 minutes.**

Before serving, stir in the cardamom and cook for 30 seconds more.

Vata types will enjoy this with a little bit of tahini or ghee drizzled on top, with chopped nuts or ground flax seed for garnish and added fiber.

Inspired by the Spanish dessert Arroz con Leche, this vegan rice pudding is super creamy and delicately flavoured with cinnamon and citrus. It can be served hot or cold.

Vegan Rice Pudding

white short grain rice

water

orange peel (organic, unwaxed)

lemon peel (organic, unwaxed)

plant milk

cinnamon (plus more for dusting)

sugar

Add rice to a sauce pan with the water and lemon and orange peel.

Bring to a boil and simmer for 10 minutes, covered with a lid.

Add the plant milk and cinnamon.

On medium heat, simmer for another 15 minutes with the lid off. Stir often.

Stir in the sugar and keep simmering for a couple more minutes, until the sugar is dissolved and the rice pudding is thick and creamy to your taste.

Divide the rice pudding up into small bowls or ramekins.

You can serve arroz con leche hot, or chill it in the fridge and serve cold and firm.

Vegan Oat Milk Rice Pudding

½ - 6 cups oat milk ((barista type works best))

sugar ((or any sugar you like))

cinnamon

salt

Jasmine rice

tsp vanilla extract ((optional))

To a medium-sized heavy-bottom pot, add oat milk, sugar, cinnamon, and salt. Stir and bring to a boil.

Once bubbling, add rice and stir. Cook for 45-50 minutes on medium-low or low heat. Make sure to stir every 10 minutes.

In the last 10 minutes of cooking, you&#39;ll need to stir every 2 minutes to prevent the rice pudding from sticking to the bottom.

Once it has thickened (it will have the consistency of yogurt), remove the pot from the heat and stir in the vanilla extract. Add any additional milk if you want to thin it out. Serve right away or cool to room temperature then refrigerate for 4 hours if you like it cold.

Creamy Vegan Rice Pudding (1 Pot)

rice

½ cups dairy-free milk ((plain, unsweetened // we used almond milk))

maple syrup

cornstarch

sea salt

light coconut milk ((we like Whole Foods 365 brand))

tsp vanilla extract

Cinnamon

Raisins

If you don’t already have cooked white rice, prepare it at this time using these instructions. 1/2 cup dry rice yields ~1 ½ cups cooked. Set aside.

To a medium saucepan, add the dairy-free milk, maple syrup, cornstarch, and sea salt. Whisk to combine, then add cooked white rice and stir with a wooden spoon or spatula.

Heat the saucepan over medium heat, stirring occasionally. Cook for about 13-16 minutes or until the rice has absorbed most of the liquid but is still slightly runny. It should resemble risotto. Next, add the light coconut milk and vanilla extract and stir constantly for 2-4 minutes until the mixture is thick yet pourable. It should look like a loose risotto — it will thicken as it cools.

Remove the pot from the heat and let the pudding cool for a few minutes if serving warm (option to top with cinnamon and raisins). Alternatively, you can let it cool completely.

To cool the pudding, place into a medium heat-proof bowl and cover the top of the pudding with parchment paper or plastic wrap to prevent a skin from forming. Place the bowl in the refrigerator for 30 minutes to 1 hour. Again, option to serve with cinnamon and raisins. We prefer the chilled rice pudding.

It will keep stored in an airtight container in the refrigerator for up to 4-5 days. It can be frozen, but we find the texture becomes grainy and brittle rather than smooth and tender.

Dairy free coconut milk rice pudding, made with leftover rice and sweet vanilla for a not-too-sweet cozy dessert. The ultra creamy base is a perfect backdrop for seasonal fruit toppings.

Coconut Milk Rice Pudding

cooked rice*

250 ml canned coconut milk, cream only

ginger (finely grated)

vanilla powder (1 teaspoon extract)

Add the rice, coconut milk, maple syrup, ginger, and vanilla to a small saucepan. Stir to combine.

Cover and bring to a simmer on low-medium heat. Cook for 10-15 minutes, stirring occasionally to prevent sticking.

Once the rice pudding is ready, about half of the coconut milk will be absorbed and it should be creamy but not claggy.

Serve warm, topped with fruit, applesauce, or jam. Leftovers can be refrigerated in a sealed container for 2-3 days, but this is best fresh.

Forget the canned rice pudding you enjoyed as a child, this easy almond milk stovetop rice pudding is the perfect easy to prepare sweet snack that can be eaten as is or dressed up to make it that little bit fancy. Only a handful of ingredients are required and you are good to go.

Almond Milk Stovetop Rice Pudding

almond milk ((or milk of choice))

white rice

orange

tsp pure vanilla extract

tsp ground cinnamon ((plus more for serving))

tsp salt

Place all of the ingredients into a medium-sized saucepan and stir well to combine.

Over high heat on the stove, bring the mixture to a boil, stirring continuously to prevent the ingredients from sticking to the pan and burning.

Reduce the heat to a simmer and continue stirring the mixture until the sauce has become thick and creamy and the rice has cooked. This should take about 15 minutes.

Once the rice has cooked and the mixture has a similar appearance and texture as oatmeal it is ready. Remove from the heat and serve warm with a sprinkle of cinnamon on top.

I made this tonight and used chocolate almond milk. It is absolutely delicious and has a gorgeous velvety texture.

It was absolutely delicious. I substituted the maple syrup for honey.

Rinse rice under running water until the water turns clear. Drain well.

In a saucepan, add 6 ½  cups of almond milk and sugar. Bring the mixture to a simmer.

Add rice and cook at medium to medium-low heat for 20-30 minutes or until the mixture is thick and creamy, stirring frequently. You might need to add more milk/ water if the mixture thickens up too much.

Stir in the remaining 1/2 cup of milk and butter. Mix until everything is well incorporated.

Top your pudding with desired toppings, if using. Your almond milk rice pudding is ready to be served.
