Chickpea Salad Sandwich

(15 ounces) can chickpeas, drained and rinsed⁠

½ large avocado⁠

onion⁠

¼ cup chopped bell pepper⁠

celery⁠

dill pickle⁠

Dijon mustard⁠

lemon juice⁠

½ tbsp dried dill⁠

½ tsp kosher salt⁠

garlic

black pepper⁠

carrot and spinach, for topping (optional)

Place chickpeas in a large mixing bowl. Use a fork or potato masher to lightly mash, leaving some whole.

Add the remaining ingredients. Taste and adjust seasoning as needed.

Assemble the sandwich by placing chickpea salad on toasted bread and topping with spinach and grated carrot, if desired.

Vegan Tuna

Can Chickpeas (Drained,

Vegan Mayonnaise ((60 grams))

Nori Sheet (Finely Chopped)

Red Onion (Finely Chopped (about half a small red onion))

Lemon

Capers (Finely Chopped)

tsp Garlic Powder

Tbsp Nutritional Yeast

Tbsp Tamari (or Soy Sauce)

Dijon Mustard

tsp White Vinegar

Sprinkle Sea Salt

Sprinkle Ground Black Pepper

Add the chickpeas to a mixing bowl and mash them with a fork.

Add in vegan mayonnaise, finely chopped nori, finely chopped red onion, lemon juice, finely chopped capers, garlic powder, nutritional yeast, tamari, dijon mustard, white vinegar and salt and pepper.

Taste test and add more salt and pepper if needed.

Mix in and you're ready to serve!

A hearty vegan Herby Chickpea Salad Sandwich full of fresh spring veggies and smashed chickpea salad. Fresh herbs and Mustard give these a delicious burst of flavor!




Herby Chickpea Salad Sandwich

Vegan Chickpea Salad (see below)

bread

Maille Mustard

lettuce leaves

Turkish cucumber, thinly sliced

carrot, thinly sliced (use a vegetable peeler)

radishes, thinly sliced

avocado sliced

sunflower

chickpeas,

Italian parsley

dill (or sub ⅛ cup fresh tarragon)

mustard

Vegan Mayo

salt and pepper

Make the chickpea salad, placing all ingredients in a medium bowl, mix and smash with a fork until well combined. Taste and adjust salt and pepper to your liking.

Assemble the sandwiches. Spread a little whole grain mustard on the bread.

Top with lettuce and a generous amount of the chickpea salad.

Layer sliced cucumber, carrots, radishes and avocado.

Whole family (including my non-vegan oldest son) LOVED this sandwich.  We used a much smaller seeded vegan bread and did a side of vegan tomato soup with a cornichon garnish.  SO GOOD!!!   Thank you!!!!

How to make the most delicious, vegan, green goddess sandwich with herby chickpeas! Simple, easy and delicious! 

Green Goddess Sandwich

Creamy vegan &quot;tuna&quot; salad made with chickpeas and jackfruit. Try this delicious spread in wraps and sandwiches or as an easy snack with raw veggies and crackers. Free from oil, gluten, and soy.

The BEST Vegan Tuna Salad

(20 oz.) can green/young jackfruit in brine

lemon,

celery, diced (about 1 cup)

red onion, diced (about 3/4 cup)

Oil-Free Vegan Aquafaba Mayo (Or ½ to ¾ cup vegan mayo of choice.)

cayenne pepper, optional

salt,

Soak

Drain the jackfruit and place in a shallow bowl or dish. Cover with water and let soak for a few minutes while you prep the onion and celery and gather the other ingredients. Preheat a saute pan over medium heat.

Drain

Drain the jackfruit, and place on a clean, lint-free towel. Gather up the ends of the towel, hold it over the sink, and squeeze the jackfruit VERY well to remove as much liquid as possible.

Saute

Transfer the jackfruit to the pan, and saute for 2 to 3 minutes, stirring occasionally.* Add 1.5 teaspoons Old Bay to the pan and stir. Cook for another minute or so, then add juice from half a lemon. Stir again, and remove from heat. Transfer jackfruit to a plate to cool.

Process

In the bowl of a large food processor combine the cooled jackfruit, chickpeas, and ½ cup mayo. Pulse 5 to 8 times. Scrape down the sides of the bowl, and add the dulse granules, cayenne, and more mayonnaise, if desired (I used the entire batch of Aquafaba Mayo to make the tuna salad nice and tangy and rich). Pulse to combine.

Season

Taste and add more salt, lemon juice, Old Bay, dulse, and/or cayenne, as desired. Add the red onion and celery, and pulse to incorporate. Transfer vegan tuna salad to a lidded storage container, and refrigerate until ready to serve.

Tempeh "Tuna" Salad

kombu seaweed

⅓ cup Easy Vegan Mayo

of ½ lemon

rib of celery, finely diced

red onion

freshly parsley, minced

dulse flakes/granules (optional, but recommended)

Salt and black pepper,

Prepare the Tempeh

use your hands to crumble the tempeh into small, bite-sized pieces over a medium pot. Break the kombu pieces in half, then add them to the pot with 3½ cups of filtered water. Bring the mixture to a boil over high heat, then cover, reduce the heat to low, and simmer for 30 minutes. Transfer the entire mixture to a glass jar and store in the fridge for at least four hours, preferrably overnight. 

Mix the Salad

add the Vegan Mayo, lemon juice, and mustard to a bowl and mix well. Drain the marinating tempeh, then add it to the bowl along with the celery, onion, parsley, and dulse flakes. Mix until evenly incorporated, then add salt and black pepper to taste.

Serve

as desired; leftovers will keep in the fridge for up to five days.

Y'all, I am SHOOK. I am not vegan, I'm not even a firm vegetarian, I am simply trying to make more plant-based choices every day and thought this recipe sounded so unique that I had to try it. My partner LOVES tuna salad so I mostly wanted to try to make this for him - he's been quite supportive of the plant-based changes, but he is also very wary of vegan "substitution" efforts like this, so I actually kept it secret as I worked on it so that he wouldn't form any premature opinions, lol. And I got the best validation ever - he LOVES it! And of course, it helps that I love it, too! The only thing I added was miso, which I think is super important for getting more of that natural sea-saltiness flavor in there. I even made the cashew mayo to go with it - I'm still not totally sold on the mayo alone (it could just be my blender, as it was just a bit too grainy), but it went incredibly well with this recipe, so no worries there. I served this on toasted whole grain bread &amp; romaine lettuce with celery, shallot, parsley, and halved cherry tomatoes. I think I'll mix in some walnuts for tomorrow's lunch. Super impressed!!

Add the chickpeas to a large bowl and use a potato masher, or fork, to roughly mash them.  It&#8217;s ok if some are left whole.

Add in the celery, onion, pickles, mayo and dijon.  Mix everything together and then season to taste with nori flakes, salt and pepper.

Assemble your meal prep bowls: Put an equal amount of vegan tuna salad into each container (about 1 cup in each one).  You can either store your crackers/bread/lettuce/etc.. in a separate container or you can get a little plastic or metal container to fits into your large container so they don&#8217;t touch the tuna salad.

Arame adds a light “sea” taste to the salad. For a more pronounced flavor, use more arame or add a little powdered kelp or dulse. You can also grind sushi nori to a powder in your blender and use it instead of or in addition to the arame, but start small and add more to taste.

Break the arame into smaller pieces before measuring. Rinse it in a strainer and place it in a small bowl. Add just enough water to cover and soak for 5 minutes. Drain (reserve the soaking water, if you like, and add it to the salad) and set aside.

Combine the tofu and half the chickpeas in a food processor and pulse several times to mash all of the chickpeas well. Add remaining chickpeas and the carrots and pulse once or twice to roughly chop. Scrape into a bowl and add all remaining ingredients, including reserved arame. Cover and chill for at least half an hour to allow the flavors to blend. Check seasonings, adding more to taste.&nbsp;

Serve with raw vegetables or as a sandwich filling.

Just made this...so delicious.  Instead of the lite silken tofu, I used your Miraclenaise made with raw cauliflower rather than canned artichoke and kept it soy free as well as BBA free.

I made this earlier today for a lighter fare before the "heavier" Easter meal tomorrow (by "heavier", I mean your black-eyed pea and collards soup accompanied by your corn cakes ;) ).

It was exactly what I'd been craving!  It's interesting that before I became vegan, I loathed tuna salad so I never imagined a dish like this would appeal to me now since making the change. (Despite my aversion to tuna salad, I was kind of a seafood hound.  I still await a faux shrimp and grits recipe from you, Susan. ;) )

I used sushi nori, as that's what's available to me here in the semi-sticks and added some sweet relish to satisfy the southern side of my palate.  I also made some quick and dirty kale chips to go with it (no dehydrator and no time to do it the long way).
