c. riced cauliflower

This Spanish vegetable rice is perfect for those days you want to cook something fancy, but don't want to spend hours in the kitchen. It tastes like heaven!

Spanish Vegetable Rice

brown rice (100 g)

Extra virgin olive oil

garlic

red bell pepper

green beans (70 g)

beans

artichokes (70 g)

tomato

tsp sweet paprika

rosemary

thyme

tsp turmeric

Pepper

Lemon (optional)

Cook the rice according to package directions.

Heat some oil in a large skillet and cook the garlic and the red bell pepper for 5 minutes over medium-high heat. Stir occasionally.

Add the green beans, broad beans and artichokes and cook for 10 minutes more.

Add the tomato and cook for another 10 minutes.

Last but not least, add the rice and the rest of the ingredients (except the lemon), stir and cook for 5 minutes.

Serve and add some lemon juice on top (optional).

In a food processor, pulse the sweet potato chunks until they reach your desired “rice” consistency.

In a large skillet over medium heat, heat oil, then add onions and let cook until translucent.

Add sweet potato rice, carrots, salt, pepper, and vegetable broth and cook until the liquid has evaporated and the sweet potato is tender, stirring occasionally.

Add peas, eggs, and soy sauce, and combine, allowing it to heat through.

Drizzle the olive oil in a large sauté pan or skillet that has a lid and bring over med-high heat. When the oil is hot, add the onion, celery and carrots and stir together. Spread the mix out in the pan and cook, stirring occasionally, for 5-6 minutes until the onion is translucent and the vegetables are softer. Add the minced garlic and stir. Cook for another 30-60 seconds. Add the rice and stir together to mix. Cook for another minute to toast the rice a bit.

Pour in the broth, stir, and raise heat to bring to a boil. Cover the pan with a lid and reduce the heat to low. Simmer on low for 45 minutes until the rice is tender and the broth is absorbed. Uncover, fluff the rice and sprinkle the parsley over top to garnish.

Rainbow Veggie Fried Rice

brown rice (uncooked)

red onion

peas (I use frozen)

sweet corn (I use frozen)

sesame oil

Tbsp. tamari (or soy sauce)

Cook the rice ahead of time according to package instructions. When cool, transfer to a sealed container in the fridge to chill for a couple hours/overnight.*

Dice carrots, bell pepper, onion, and mince garlic.

In a large wok or pan over medium-high heat, add 1 tsp. sesame oil. Let heat for a minute.

When oil is hot, carefully add onion, carrots, and bell pepper. Stirring often, sauté for about 5-7 minutes.

Add peas and corn. Cook for 2 minutes.

Add garlic and cook for 30 seconds.

Add rice and 3 Tbsp. tamari (more/less as needed). Stirring occasionally, cook for about 5 minutes. Serve with additional tamari or sesame seeds if desired.

Yes! What a wonderful way to use up leftover rice! Such a great recipe to make on a weeknight, and you really get to eat the rainbow!  This dish is beautifully colourful!  I added some roasted cashews for a bit of crunch.  Thanks so much for sharing this recipe!

Djuvec (Vegetable Rice)

onion (diced)

red bell pepper (chopped)

garlic (finely chopped)

Ajvar ((*see notes))

tbsp Vegeta ((optional) or use vegetable bouillon powder)

paprika powder (or more to taste)

onion powder ((optional))

Salt and pepper (to taste)

rice ((*see notes))

(15 oz) can crushed tomatoes

water (or vegetable broth

peas (frozen)

Fresh herbs (to garnish (e.g. parsley))

You can watch the video in the post for visual instructions.Heat olive oil in a large pot or frying pan. Add the onion and pepper and sauté for 3-4 minutes.

Add garlic, Ajvar, all spices (except the fresh herbs), and rice and fry for 1-2 more minutes.

Also, add the crushed tomatoes and the vegetable broth, stir well and bring the mixture to a boil.

Let simmer covered for about 12-15 minutes at low heat, stirring occasionally.

Then add the frozen peas and simmer for a further 5-6 minutes. If too much liquid evaporates, simply add more vegetable broth or water.

Taste the rice and if necessary season with salt/pepper/spices. Garnish with fresh parsley and add a little lemon juice if desired. Enjoy!
