21 Vegetarian Dinner Ideas - Perfect for busy evenings

olive oil

broccoli ((or use green beans))

spring onions

sweet potato

chickpeas ((15 oz = 435 grams, drained and rinsed))

maple syrup

lemon ((juiced; lime works too!))

basmati rice ((cooked; whole grain rice is nice too))

If serving with rice, get that cooking now according to package instructions.

Grate the sweet potato and the carrots.

Chop the spring onion, broccoli, and zucchini.

Add the olive&nbsp;oil to a large pan and fry all the veg on a medium heat. This needs about 5-7 minutes.

Next, add the curry powder and curry paste, and the beaten (smack it with a heavy spoon a few times to let out the flavour) lemongrass.

Drain and rinse the chickpeas.

Stir and fry for another couple of minutes then add the coconut milk, chickpeas, lemon juice, maple syrup and salt. Let it simmer for another 5 minutes.

Alright, that&#x27;s it. Take out the lemongrass. Serve with rice and top with roasted cashews or peanuts. Easy. Awesome.

This Garlic-Butter Spinach and Pasta recipe is seriously good. Fresh spinach and bow tie pasta tossed in a delicious and creamy garlic-butter sauce.

Garlic-Butter Spinach and Pasta

Prepare pasta following directions on the box.

Melt butter over medium heat in a large skillet or dutch oven.

Add garlic and continue to stir and cook until fragrant; about 30 seconds.

Add spinach; season with salt, pepper, and basil, and cook until spinach is wilted; about 1 to 2 minutes. Depending on the size of your skillet, you might have to cook the spinach down in batches.

Drain cooked pasta and add to the spinach mixture; add cream cheese and milk.

Mix and stir until everything is well incorporated and cream cheese is melted.

Taste for seasonings and adjust accordingly.

Top with fresh Parmigiano-Reggiano shavings.

Serve.

This Southwest salad is a delicious plant based dinner recipe, a mix of sweet potatoes, veggies, and rice drizzled with a green chile vinaigrette.

Southwest Salad

cumin

sweet potatoes (1 1/2 pounds)

garlic powder

olive oil,

corn, enough corn

can diced mild green chiles

soy sauce (or tamari or coconut aminos)

sherry vinegar

pepper

greens

cherry tomatoes

Make the rice: Follow the package instructions or use our Instant Pot rice method. Then stir in the olive oil, cumin, chili powder, and kosher salt.

Meanwhile, make the roasted vegetables: Chop the sweet potatoes into bite-sized pieces. Mix with garlic powder, salt and olive oil. Place on a parchment lined baking sheet and roast for 20 to 25 minutes, until tender.

Shuck the corn cobs and cut off corn kernels. Place on a parchment lined baking sheet in a single layer, and roast in the same oven for about 5 minutes until tender and bright yellow.

Make the dressing: Thoroughly drain the green chilies. Using an immersion blender or blender, blend the chilies, soy sauce, and sherry vinegar. Add 2 tablespoons of olive oil and blend. Then gradually add another 2 tablespoons olive oil at a time and blend, until a creamy emulsion forms. (Makes more than enough for the bowls; leftovers keep in the refrigerator; warm to room temperature prior to serving.)

Serve: Slice the tomatoes and dice the red onion. Sprinkle the tomatoes with a bit of kosher salt. To serve, place the greens in bowls, then top with rice, roasted sweet potatoes and corn, tomatoes, red onion, and pepitas. Serve the dressing on the side; store leftover dressing refrigerated.

Oven baked macaroni made with a mixture of eggs, milk, and feta cheese, garnished with a crispy crumb topping.

Oven Baked Macaroni and Feta Cheese

box (1-pound) Elbow Macaroni

feta cheese

eggs

salt and pepper, (to taste)

Italian Seasoning

sweet paprika

panko crumbs breadcrumbs

parmesan cheese, (for topping)

parsley, (for garnish)

Preheat oven to 400˚F.

Cook macaroni in salted water according to package directions. Drain.

In the meantime, generously butter a 13-by-9-inch baking dish.

Pour cooked macaroni into baking dish and toss with 1 tablespoon butter.

Mix in crumbled feta cheese.

In a mixing bowl, whisk together the eggs, milk, salt, pepper, Italian seasoning, garlic powder, chili powder, and paprika.

Pour the egg mixture over the macaroni; mixture should come about 3/4 of the way up - it shouldn't cover the macaroni.

Heat remaining butter in a frying pan.

Add the bread crumbs to the pan and cook over medium-high heat, stirring frequently, until golden brown.

Remove from heat and sprinkle the bread crumbs over the macaroni.

Bake for 35 minutes, or until the custard sets and edges are browned.

Let cool for 5 minutes.

Top with freshly grated parmesan cheese and parsley; serve.
