Bombay sandwich is a deliciously wholesome sandwich made by layering thinly sliced vegetables between slices of soft bread, laced with generous amounts of fresh cilantro-mint chutney

cucumber (persian)

tomato (ripe but firm, thinly sliced)

potato (steamed)

onion (halves & thinly sliced)

peppers

avocado (thinly sliced)

beet (steamed & thinly sliced)

Peel and thinly slice cucumbers. You may choose to keep the peel on or partially peel. Peel the potato and thinly slice.

Apply up to 1 tablespoon of chutney (more or less depending on the spice level on one side of the bread.

Take one sliced and start layering veggies over the chutney side. Start with steamed veggies that do not release too much water like potatoes/beets as it will help the bread from getting soggy. Then layer over cucumbers and tomatoes. Finally layer onions/bell peppers making sure you have a nice flat layer of veggies.

Sprinkle with chat masala or salt &amp; pepper (optional). Finally place the second slice of bread chutney side down over the veggies. Cut the sandwich in half lengthwise or diagonally and serve immediately.

Thinly slice the red onion. Peel and shred the carrot (this tool is perfect for the job).

Spread one slice of bread with the white bean dip. Add the red onion slices, shredded carrot, feta crumbles, and pea shoots. Top with the second slice of bread.

Whip the ingredients for the scallion cream cheese together in a small bowl (I used a fork).

Lightly toast the bread. Spread the cream cheese over one side of each pieces of bread.

Pile the vegetables onto the bread, then close. Slice in half and enjoy.

Swiss cheese

cucumber (thinly sliced)

Roma tomato (thinly sliced)

sunflower seeds

cream cheese (softened)

tbsp. non-fat plain Greek yogurt

green onions (chopped)

fresh chives (chopped)

onion powder

In a small bowl mix together all of the ingredients for your chive and onion spread.

Reserve until needed.

Chive and Onion Spread

Lightly toast bread. Once cooled, on one slice spread a thin layer of chive &amp; onion spread.

Top with spinach, cheese, mashed avocado (plus 1 tsp fresh lemon juice &amp; salt to taste), cucumber, tomatoes, and sprouts.&nbsp;

Sprinkle on the sunflower seeds. Spread thin later of chive &amp; onion spread on another slice of bread and top your sandwich. Enjoy!

Bread (I use multigrain bread)

Carrot (Julienned)

Cucumber (Halved long-ways and thinly cut)

Avocado

Red onion (Thinly cut)

Spread mayo on one side and mustard on the other side of your two pieces of bread.

For your first layer, add your lettuce that is chopped into 3&quot; pieces. Top with your choice of protein, add avocado, chopped red onion, thinly cut cucumber (long ways), julienned carrot.

Grab some saran wrap and put your sandwich on top. Tightly wrap the sandwich to compress it. Go around 2 times to ensure everything gets secured in place.

whole grain bread (e.g., rye, whole wheat, gluten-free multigrain)

Preheat the oven to 375 F. Arrange the bread on a baking sheet and toast in the oven for 5 to 8 minutes, until lightly browned, or use a toaster.

Meanwhile, in a medium bowl, mash the chickpeas with a potato masher into a chunky paste.

Mix in the celery, onion, pickles, carrot, parsley, capers, and seaweed.

In a small bowl, make the dressing by mixing together the plant-based mayonnaise, mustard, miso paste, lemon juice, soy sauce, and nutritional yeast until smooth.

Stir the dressing into the chickpea mixture.

To make a sandwich, spread ½ cup of the filling across 1 slice of toasted bread. Top with 1 lettuce leaf, 2 slices of tomato, and 2 additional pickle slices. Top with another slice of bread. Continue until you have 6 sandwiches. Slice them in half diagonally and serve immediately.

Vegan Chickpea Sea Salad

This vegan sandwich recipe feeds your craving for a protein-rich meatless sandwich.  This is a tasty veggie sandwich filled with comforting Mediterranean flavors.

Vegan Sandwich 

seitan,

red bell pepper, diced

onion,

pack baby Bella mushrooms, sliced

garlic clove, crushed

tsp shawarma spice mix

tsp salt

tsp Aleppo pepper or red pepper flakes

tsp extra virgin olive oil (for marinating)

tsp red wine vinegar

mini hoagie rolls, hamburger rolls, pita, or pocketless pita

Tahini Sauce

Homemade Hummus

Fresh Parsley or cilantro (optional)

Combine seitan, red pepper, onion, and mushrooms in a bowl or a zip storage bag. Add garlic, shawarma spice mix, and salt.  Mix well so the spices coat the seitan, then add  2 tsp of olive oil and vinegar. Cover and place in the fridge for one hour or overnight. 

While the seitan is marinating In the meantime, prepare the tahini sauce and the Homemade hummus

Heat the remaining olive oil in a large nonstick skillet. Add marinated seitan and vegetables (including liquid) and cook over medium-high heat for about 20 minutes, or until the veggies are cooked stirring occasionally.

Spread hummus on each pita, add about 1/3 cup of cooked seitan,  add pickles, top with 1-2 tablespoons of tahini sauce and add parsley and cilantro if using. Roll into a sandwich. See notes 1,2 &amp;3

I have never eaten a philly cheesesteak either but I am super excited to try this recipe!

I made these for dinner tonight. They were so delicious! Huge hit at my house! I did substitute provolone cheese for the tahini sauce. My husband isn't into tahini unfortunately. Other than that I followed the recipe exactly. I can't wait to make these again!

Great just great. Now I'm homesick again. Going to school at the Episcopal School of Nursing I ate so many of these. Last time I was home we stopped at Geno's. Mom had a doctor's appointment. She and a friend got the cheese steaks and I a cheese hoagie. Homesick. TastyKakes. Proper soft pretzels.

This ULTIMATE Veggie Sandwich features a crazy tasty homemade pimento cheese sandwich spread and a mountain of fresh vegetables. It&#039;s easy to make and a delicious vegetarian option for lunch!

Ultimate Veggie Sandwich

romaine lettuce (or lettuce of choice)

red bell pepper (, sliced thin)

pimento cheese ((recipe below))

sprouts

green bell pepper

onion

hummus

mayo/mustard

oz plain cream cheese

oz Cabot Sharp Cheddar Cheese (, coarsley grated)

mayo

¼ cup jarred diced pimentos

¼ tsp sweet paprika

First make the pimento cheese.

In a medium bowl, combine softened cream cheese with mayo, freshly grated Cabot cheddar cheese, diced pimentos,  garlic powder, paprika, and salt. Mix well with a fork or gently incorporate electric hand mixer on the lowest setting.

Pimento cheese can be covered and chilled for later. Feel free to add extra spices to taste as well as double/triple the recipe if needed!

Now let&#039;s make our sandwich!

Thinly slice and prep veggies and toast the bread. Feel free to mix and match your favorites when it comes to the veggies and add extra of your favorite.

Spread pimento cheese onto one side of the toast and top with your sliced vegetables. spread the remaining toast with your sandwich spread of choice (hummus, mayo, mustard, etc...) or simply leave plain if preferred. Slice sandwich in half and enjoy!
