Vegan Waldorf Salad

lemon juice

maple syrup

red apples (HoneyCrisp, Fuji, Red Delicious) chopped

red grapes

raisins

walnuts roughly chopped

In a medium bowl combine, vegan mayonnaise, lemon juice, maple syrup, and salt. Whisk to combine. 

Add apples, grapes, raisins, celery, walnuts. Stir until fully combines. 

Refrigerate for at least one hour before serving. 

Classic. I chopped the apples last and squeezed the lemon juice over them quickly so they wouldn’t brown.

Wash and dice your unpeeled apples before adding them to a large mixing bowl. Toss them with the lemon juice.

Stir the salt and optional sweetener into the vegan mayo before adding the mayo, halved grapes, diced celery, and sunflower seeds to the bowl of apples.

Toss everything to fully coat in the mayo.

I have never actually made a Waldorf salad before. I know the version with walnuts. But love yours. Looks really interesting and I think it is time I try making it as well. Looks really yummy. :-)

unocooked farro (yield 3 to 3/12 cups cooked)

water

cashew mayo

Tablespoons apple cider vinegar

dijon mustard

red onion

Tablespoons chopped fresh dill

apples, chopped into bite-sized pieces (I used honey crisp)

celery (diced)

walnuts

Salt and pepper

Tablespoons parsley

(if using)

Cook 1 cup farro according to package directions

Combine ingredients in a high-speed blender (yields 2 cups)

Will last in the refrigerator for 7 days

Cashew Mayo

Combine 1/4 cup cashew mayo, maple syrup, dijon mustard, and apple cider vinegar; whisk together and set aside.

Dresssing

Prepare all vegetables and put them in a large bowl.

Add nuts and raisins or dried cranberries.

Add dressing and stir to mix well.

Add cooked, cooled farro is using.

Refrigerate for an hour before serving.

Classic Waldorf Salad

greek yogurt (dairy

Stir

Make dressing. In a small bowl, stir together the Greek yogurt, mayonnaise, lemon juice, and honey. Set aside.

Toss

Toss it all together. In a large bowl, add the green apples, celery, grapes, walnuts, parsley, salt, and mayo dressing. Stir it all together until everything is evenly coated.

I used sour cream instead of yogurt, because that's what I had, and other recipes call for it.  I omitted the salt and parsley.  Pretty good, but I would reduce the amount of dressing, because it overpowers the rest of the ingredients.  As a dinner salad, I also think it might benefit from crubled blue cheese or a sharp cheddar.

I added green &amp;  red grapes, as well as the celery, green apples, and the remaining ingredients! So easy!!! Made. It with a side dish for baked haddock &amp; rice! Everyone said it was delicious! Thank you so much! Lisa

Didn't have any grapes so skipped those, but I think it had the right level of sweetness nonetheless.

Oh, I loved this recipe!

Loved the way that you changed the sugar for honey (all hail the honey bees). I changed the mayo to the light version and the Greek yogurt to the zero % fat (or strained) version.

As I don't like Granny Smiths, I used two regular organic apples and added an extra tablespoon of lemon juice for that necessary zip and zing.

I had the Waldorf Salad on the side with some baby potatoes jacketed (with wee dots of half fat butter), steamed Tenderstem™ broccoli, and a lightly seasoned turkey stake. The absolute business.

I found this Waldorf salad recipe before Thanksgiving, and it was a hit at the family gathering. I have made it three times since then, and it was a hit each time. When others ask me for the recipe, they easily remember Downshiftology. When I told my sister where I got the recipe, I found out that she also goes to Downshiftology for recipes. So now it’s a family thing.

I have made this Waldorf salad twice now. The first time, exactly as written, and it was delicious. The 2nd time I forgot to purchase fresh parsley and couldn't find red grapes so used green ones and dried parsley instead, and it was still really delicious. It was a big hit at our Thanksgiving table this year!

This classic Waldorf Salad recipe has fresh grapes, apples, celery, walnuts, and raisins in a creamy homemade dressing. We love to enjoy it on Boston Bib lettuce. Whip it up in 10 minutes and serve as a side dish or add in some protein for a complete meal.

red apple ((honey crisp, gala

golden raisins

walnut halves

mayonnaise ((or half Greek yogurt))

sugar

red wine vinegar

black pepper (,

Boston Bib lettuce (,

Salad: In a large bowl, toss the apples in lemon juice. Add celery, grapes, raisins and walnuts.

Dressing: In a separate bowl, stir together the mayonnaise, sugar, red wine vinegar and pepper. Taste and adjust to your liking with a little extra mayonnaise or more vinegar. 

Combine: Coat apple mixture in desired amount of dressing (you may not want to use it all).

Refrigerate until ready to serve. Serve cold, on top of bib lettuce or large lettuce leaf.

In the ingredient list, you left out how much lemon juice.

Made it just like the recipe says then added some chicken. It was great! Definitely going to replace my chicken salad with this!
