In a small pot over medium heat, combine the sugar and water. Bring to a boil, stirring to dissolve the sugar completely.

Remove the pot from the heat and stir in the cucumber. Let steep, covered, for at least 4 hours or up to overnight.

Strain the syrup through a fine-mesh sieve or cheesecloth, pushing to extract as much syrup as possible. Store in an airtight container in the refrigerator for up to 1 month.

In a cocktail shaker filled with ice, combine the gin, watermelon juice, lime juice, and simple syrup. Shake vigorously for 20 seconds.

Strain into a glass filled with ice and top with club soda.

ginger beer ((about 12 ounces))

In&nbsp;food processor, blend watermelon until smooth, about 1-3 minutes.

Using a strainer and a&nbsp;large bowl, pour blended watermelon over strainer so that watermelon juice falls into the bowl. Use a&nbsp;spatula&nbsp;to move and press the watermelon against the strainer to get out all of the juice (see video above for example). Discard any solids left in the strainer.

Pour watermelon juice into a large pitcher with light rum, orange juice, lime juice. Stir to combine.

When ready to serve, add ginger beer to pitcher, then stir to combine.

Pour watermelon rum punch over ice and enjoy!

Place watermelon cubes in a single layer in an extra-large zip-top plastic freezer bag, and freeze 8 hours. Let stand at room temperature 15 minutes.

Process half each of watermelon, gingerale, water, and limeade concentrate in a blender until smooth; pour mixture into a pitcher. Repeat procedure with remaining half of ingredients; stir into the pitcher, and serve immediately.

Mexican Watermelon Cooler

(approx 8 cups) medium seedless watermelon (cut into cubes, chilled and peeled)

sugar (or another sweetener of your choice)

water (divided)

Pour one cup of water in a pot over medium heat. Add the sugar and mix until well dissolved, set aside and let cool down.

Place the watermelon cubes and three cups of water in a blender and mix very well (depending on the size of your blender, you may need to do this two times).

Add the sugar water and lime juice. Mix well.

Pour the blended watermelon water into a two liter (~2 qt) pitcher, add the sugar water and the other 5 cups of water. Add the lime juice and mix well.&nbsp; Cool down in the fridge and serve super cold or on ice.

Divide the blended watermelon and sugar water into 2 two-liters (~2 qt each) pitchers, add the other 4 cups of water (2 per pitcher). If you have a big container (4 quarts) even better. Cool down in the fridge and serve super cold or on ice.
