Heat the olive oil in a large, high-side sauté pan or skillet over medium heat. Add the garlic, fennel seeds, and red pepper flakes and sauté until fragrant, about 1 minute. Add the tomatoes, onion, and 1/2 teaspoon of salt and sauté until the tomatoes break down to release their juices and the onion is softened and translucent, about 5 minutes.

Add the water and wine and bring the liquid to a gentle simmer. Simmer, uncovered, until the liquid reduces by about one fourth, 5 to 10 minutes. Taste and season with additional salt, as needed.

Season the salmon with salt and place it in the pan. Reduce the heat to medium-low, cover the pan, and simmer until the fish just begins to flake, 5 to 8 minutes, depending on the thickness of your fillets. An instant-read thermometer inserted into the middle of the thickest fillet should read 120°F to 130°F for medium-rare or 135°F to 145°F if you prefer your salmon more well done.

Transfer the salmon fillets to 4 shallow bowls and spoon the broth around them. Sprinkle with parsley and serve with bread, if desired.

Broccoli Steaks with Walnut-Raisin Salsa

Place a rack in the middle of the oven and preheat the oven to 450°F.

Trim off about 1/2 inch from the bottom of the broccoli stems to remove their dried ends and use a vegetable peeler to peel away the tough, fibrous skin on the outside of the stems to reveal the pale green flesh. Halve each broccoli head from the stem end lengthwise to get 4 halves and place them on a rimmed sheet pan. Drizzle with 2 tablespoons of olive oil and toss gently to coat, rubbing the oil onto the stems. Lightly season all over with salt and pepper. Place the halves, cut-side down, on the pan and roast until browned and caramelized underneath, 25 to 30 minutes. Flip the broccoli and continue to roast until tender, 10 to 15 minutes more.

Meanwhile, prepare the salsa. In a medium bowl, combine the vinegar and raisins and let rest for 5 minutes to allow the raisins to plump and soften. Add the remaining 2 tablespoons of olive oil, the walnuts, ricotta salata, parsley, garlic, and red pepper flakes. Mix well.

Transfer the roasted broccoli steaks to a serving platter or individual plates. Spoon the salsa generously over the top and serve.

Let 4 salmon fillets sit at room temperature while you prepare the sauce. 

Mince 2 garlic cloves. Place the garlic, 3/4 cup packed light brown sugar, 1/2 cup hot sauce, 1 tablespoon apple cider vinegar, 1/2 teaspoon of the kosher salt, and 1/4 teaspoon red pepper flakes in a small saucepan over medium heat. Bring to a boil, stirring to dissolve the sugar. Reduce the heat to low and simmer until slightly thickened, about 10 minutes. Stir and remove from the heat. The sauce will thicken as it cools. 

Pat the salmon fillets dry with a paper towel and season all over with the remaining 1 teaspoon kosher salt. Heat 2 tablespoons olive oil in a large cast iron or non-stick skillet over medium-high heat until shimmering. Add the salmon skin-side up and and sear until golden-brown on the bottom, 4 to 5 minutes. 

Flip the salmon with a metal spatula. Cook for 2 minutes. Pour the sauce evenly over the salmon and continue to cook, occasionally using a spoon to baste the salmon with the sauce, until the salmon is just cooked through cooked, about 2 minutes more.

Serve with the sauce from the skillet spooned over the salmon and sprinkled with scallions.

Boil the potatoes. Scrub 2 1/4 pound Yukon Gold potatoes and place in a large pot. Add enough cold water to cover the potatoes by about 2 inches. Bring to a boil over medium-high heat. Reduce the heat to maintain a simmer and simmer until the potatoes are knife tender and cooked through, 20 to 30 minutes depending on the size. Start heating a large frying pan over medium heat when the potatoes are almost ready.

Drain and dry the potatoes. Drain the potatoes. Transfer to the hot pan and cook, turning them occasionally, until the skin and any exposed flesh is dry on all sides (do not let the skin brown), about 2 minutes.

Let the potatoes cool slightly, then peel. Set the potatoes aside until cool enough to handle. Peel the potatoes while still warm.

Make the gnocchi dough. Place 1 1/3 cups of the all-purpose or ‘00’ flour and 2 teaspoons kosher salt on a work surface. Roll the dough out into ropes. Dust the work surface with more flour and divide the dough into 8 portions. Working with one piece at a time, use your hands and roll it out from the center into a rope that is about 1/2-inch wide.

Cut the ropes. Cut each rope crosswise into 1-inch pieces, then transfer them to a floured rimmed baking sheet.

Form the gnocchi. Roll each piece out on a grooved surface (such as a gnocchi board), or gently roll along the back of the fork with your thumb. (Grooves help them trap in more sauce.) Return to the baking sheet.

Boil the gnocchi. Bring a large pot of heavily salted water to a boil over medium-high heat. Add half the gnocchi and stir. Boil until they float to the surface and are cooked through, about 2 minutes. Use a slotted spoon to transfer to a serving platter. Repeat cooking the remaining gnocchi. 

Top with sauce and serve. Top with sauce if desired and serve immediately.

Bring 1 1/2 cups water to a boil over medium-high heat in a large frying pan. Add 1 instant dashi packet and simmer for 3 minutes. Remove the packet. (If using instant dashi powder, add 1 teaspoon to the boiling water and whisk to dissolve, no need to simmer.)

Add 1/4 cup mirin, 1/4 cup soy sauce, and 1 tablespoon packed light brown sugar to the pan, stir to dissolve the sugar, and bring to a boil. Add the chicken and onion and simmer briskly uncovered, stirring occasionally, until the chicken and onion are cooked through and tender, and the liquid is reduced by half, 10 to 12 minutes. Meanwhile, lightly beat 6 large eggs together. Thinly slice 2 medium scallions.

Pour the beaten eggs into the pan, starting from the middle and pouring towards the outside edges in a circular motion (this ensures to cook the egg evenly). Gently shake the pan to make a marbling of the egg and seasonings for a melting texture. Cover and simmer on medium low heat until the eggs are just softly set, 3 to 5 minutes. Remove the pan from the heat.

Divide 5 cups rice between 4 bowls and flatten the rice slightly. Gently scoop the egg and chicken mixture over the rice, doing your best to keep it together in large portions. Spoon some of the cooking liquid over the top so the rice absorbs the flavour. Sprinkle with the scallions and tear 1/2 nori sheet on top if desired. Serve immediately, as the egg will set further as it sits.

Bring a large pot of water to a boil over high heat. Meanwhile, remove the casings from 12 ounces Italian sausage. Drain 1 (12-ounce) jar sliced roasted red peppers. Finely grate until you have 1/2 cup Parmesan cheese, plus more for serving.

Salt the water generously and stir in 12 ounces orecchiette pasta. Reduce the heat to medium and cook until the pasta is al dente, about 10 minutes. Remove about 1 cup of the pasta water and set aside. Drain and set aside in the colander. 

Place the pot back over medium-high heat, and add 1 tablespoon olive oil to the pot. When the oil is shimmering, add the sausage and begin gently breaking up the links with a wooden spoon, but allow the sausage to begin to brown before aggressively stirring. Cook until golden brown and cooked through, about 5 minutes.

Add 1/3 cup dry white wine and simmer for 2 minutes, scraping up any browned bits off the bottom of the pot. Stir in the red pepper strips. Add 5 ounces baby spinach or other tender greens and sprinkle lightly with salt and several grinds of pepper. Stir until the spinach is about halfway wilted.

Add the pasta to the pot, along with 1 tablespoon unsalted  butter and the Parmesan. Toss until well-combined and both the butter and cheese have melted into the barest slick of sauce, adding a splash of the reserved pasta water as needed to help it along. Serve straight from the pot with more grated Parmesan, if desired.

30-Minute Kielbasa and Cabbage Skillet

Halve 12 to 16 ounces kielbasa sausage lengthwise, then cut crosswise into 1/2-inch-wide pieces. Core and chop 1/2 head green cabbage into rough 1-inch pieces (about 8 cups). 

Melt 2 tablespoons unsalted butter in a large cast iron or regular skillet over medium-high heat. Add 1/4 teaspoon caraway seeds and a pinch red pepper flakes, and cook until fragrant, about 30 seconds. Add the kielbasa and cook until browned, 6 to 8 minutes. 

Add the cabbage, 1/4 teaspoon kosher salt, and 1/4 teaspoon black pepper, and cook, stirring occasionally and scraping the bottom of the pan to release any browned bits, until tender and lightly browned, 8 to 10 minutes. Add 1 tablespoon whole-grain mustard and 1 tablespoon apple cider vinegar and toss to combine.

Skillet-Roasted Chicken with Apples and Cabbage

Arrange a rack in the middle of the oven and heat the oven to 450ºF. Meanwhile, prepare the cabbage and chicken.

Cut 1/2 large or 1 small cabbage into at least 1-inch thick slabs. Arrange cut-side down in a single layer in a 10 or 12-inch cast-iron or other oven-safe skillet or frying pan, trimming or cutting them as needed to fit in a single, tight layer. Season with 1 teaspoon of the kosher salt and a few grinds of black pepper.

Mix 1/2 teaspoon dried thyme, the remaining 1 teaspoon kosher salt, and 1/4 teaspoon black pepper together in a small bowl. Cut 3 tablespoons unsalted butter into small pieces. Scatter about 1/3 of the butter pieces over the cabbage. 

Remove and discard any giblets inside a whole chicken, then pat the chicken dry with paper towels. Gently run your fingers between the skin and meat over the breasts and legs to loosen and separate without tearing. Tuck the remaining pieces of butter under the skin. Season the outside of the chicken all over with the thyme mixture. Place the chicken breast-side up on the cabbage, then tuck the wing tips under the body.

Roast for 30 minutes. Meanwhile, peel 2 medium apples. Quarter and core the apples for 8 total pieces.

Remove the pan from the oven. Tuck the apple pieces around and a little bit under the chicken. Roast until the chicken is golden brown and an instant-read thermometer inserted into the thickest part of the thigh registers 165ºF, 30 to 40 minutes more.

Remove the pan from the oven. Tilt the chicken slightly (I like to insert the handle of a wooden spoon into the neck cavity to tilt it) so the juices in the cavity run out into the pan. Transfer the chicken to a clean cutting board and let rest at least 15 minutes. Meanwhile, nestle the apple pieces into the cabbage. Return the pan to the oven and roast until the cabbage is browned, about 15 minutes more.

Carve the chicken and serve with the cabbage and apples.

Sheet Pan Pistachio-Crusted Cod with Fall Vegetables

Arrange a rack in the middle of the oven and heat the oven to 425°F. 

Prepare the following, placing them on a rimmed baking sheet as you complete them: Trim and halve 1 pound Brussels sprouts. Cut 1 pound sweet potatoes (no need to peel) into 1-inch chunks. Cut 1 medium red onion into 1-inch chunks.

Drizzle with 3 tablespoons of the olive oil, season with 1 teaspoon kosher salt and 1/2 teaspoon black pepper, and toss to combine. Spread out in an even layer. Roast for 25 minutes. Meanwhile, coat the fish with the pistachios. 

Place 3/4 cup shelled, roasted, and salted pistachios, 1 garlic clove, and the remaining of 1 teaspoon olive oil in the bowl of a food processor fitted with the blade attachment. Pulse until coarsely chopped, about 40 pulses. Transfer to a wide, shallow bowl or pie plate.

Pat 4 skinless cod fillets dry with a paper towel. Lightly season all over with kosher salt and black pepper. Brush 2 tablespoons Dijon mustard on the tops of the fish. Place the fish mustard-side down in the chopped pistachios and press firmly to coat so that they adhere. Place the fish pistachio-side up on a large plate. If there are any pistachios left, use your hands to press them into any open spaces on the fish. Refrigerate until the vegetables are ready.

Remove the baking sheet from the oven. Reduce the oven temperature to 400°F. Toss the vegetables, then push them aside to create 4 open spaces for the fish. Use a spatula to carefully transfer the fish to the open spaces. Roast until the fish is opaque and flakes easily, and the vegetables are tender, 10 to 15 minutes more.

This 20-minute dish, inspired by the Spanish tapas dish gambas a ajillo, makes for a flavorful weeknight dinner with very little effort. It&#x27;s packed with garlicky shrimp, blistered tomatoes, and creamy white beans.

Grate or mince 4 of the large garlic cloves into a large bowl. Thinly slice the remaining 1 large garlic clove and set aside. Finely grate the zest of 1 medium lime into the bowl, then cut the lime in half and set aside. Coarsely chop 1/2 cup fresh parsley leaves and tender stems. Place half in the bowl and reserve the remaining half.

Add 1/2 teaspoon dried oregano, 1/2 teaspoon paprika, 1/2 teaspoon of the red pepper flakes, 1 teaspoon kosher salt, and 2 tablespoons of the olive oil to the bowl. Stir to combine. Add 1 pound peeled and deveined uncooked shrimp and toss to coat. Let the shrimp marinate 10 to 15 minutes at room temperature. (Alternatively, cover and refrigerate this, the sliced garlic clove, lime halves, and reserved parsley overnight.)

Heat the remaining 3 tablespoons olive oil in a 12-inch cast iron or heavy-weight skillet over medium-high heat until shimmering. Add 1 pint grape tomatoes, then season with kosher salt and 1/4 teaspoon red pepper flakes. Cook, stirring occasionally, until the skins start to pop, about 2 minutes. Meanwhile, drain and rinse 1 can cannellini beans. 

Add the shrimp and marinade, stir to combine, and cook until the shrimp start to turn pink, about 1 minute. Add the beans and sliced garlic and cook, stirring every minute or so, until the shrimp are just cooked through and the tomatoes have burst open, 3 to 4 minutes total (the beans might start to become a creamy paste, which is okay and delicious).

Remove from the heat. Season with kosher salt and squeeze the lime halves over the shrimp. Drizzle with more olive oil, garnish with the reserved parsley, and serve immediately with crusty bread if desired.
