The traditional shape of these holey crispbreads comes from the time  when they were stored on a pole over the fire to stay crisp, but an airtight container works, too.

Rye crispbread

300 grams/10½oz wholemeal rye flour, plus extra for dusting

salt

½ tsp baking powder

anise seeds or fennel seeds

tsp honey

grams/1 ounces butter, softened

Crispbreads are simple to make and a lovely thing to serve up when you have friends over. Top with cheese or pâté.

These vegan oatmeal and raisin cookies are quick to make for a snack emergency. They are the perfect balance of chewy in the centre and crisp at the edges.

Each cookie provides 103 kcal, 1.5g protein, 16.5g carbohydrate (of which 8.5g sugars), 3.5g fat (of which 2.5g saturates), 1g fibre and 0.2g salt. 

Vegan oatmeal raisin cookies

grams/3½oz spelt, wholemeal flour

½ tsp bicarbonate of soda

cinnamon

115 grams/4 ounces oatmeal, such as rolled oats

grams/1¾oz coconut oil, melted

brown sugar

grams/1¾oz sugar

tbsp aquafaba

vanilla extract

grams/2½oz raisins (you can also use currants, snipped dried apricots

Salmon is a great fish to use in a quiche due to its relatively high fat content so you don’t need to worry about overcooking it. The wholemeal crust provides a lovely nutty taste and slight crunch.

Each serving provides 363 kcal, 26g protein, 27g carbohydrate, 16g fat, 6g fibre.

For this recipe you will need a 24cm/9½in, 3cm/1¼in deep quiche tin.

Salmon and broccoli quiche

80 grams/2¾oz light vegetable spread,

200 grams/7 ounces wholemeal flour,

tsp sea salt

150 grams/5½oz broccoli, cut into 2.5.cm/1in florets

150 grams/5½oz asparagus,

eggs

100 milliliters/3½fl oz full-fat milk

tbsp finely chopped fresh dill

tbsp finely chopped fresh basil

salmon

grams/3½oz frozen peas, defrosted

spring onions, trimmed and finely sliced

sea salt and black pepper

This healthy banana muffin recipe makes eating cake for breakfast guilt-free! Ripe bananas add sweetness to muffins, so you don't have to use much sugar. Wholemeal flour give the muffins plenty of fibre, keeping you full for longer.

Equipment: You will need a six-hole muffin tin.

Each muffin provides 206 kcal, 4.5g protein, 30g carbohydrate (of which 13g sugars), 7.5g fat (of which 0.8g saturates), 1g fibre and 0.4g salt.


Healthy banana muffins

grams/4½oz wholemeal flour

tbsp light muscovado sugar

level tsp baking powder

medium free-range egg, beaten

grams/1¾oz low-fat plain yoghurt

milliliters/2fl oz rapeseed oil,

bananas (175 grams/6 ounces peeled weight), roughly mashed

The star here is the buckwheat, not only because it makes these cookies gluten-free, but mainly because I feel it brings its own nutty flavour and unique texture, creating a cookie that has softness and a shortbready bite, as well as a subtle smokiness. Those who like a truly chewy cookie might find these a little cakey, but I like chewiness in a cookie and yet find constant excuses to make these.

dark chocolate (minimum 70% cocoa solids)

grams/4½oz buckwheat flour

cocoa powder, sieved

½ tsp fine sea salt

60 grams/2¼oz soft unsalted butter

grams/4½oz soft dark brown sugar

vanilla paste

free-range eggs, fridge-cold

Buckwheat triple chocolate cookies

Rich wholemeal pastry packed with a potato, onion and cheese filling makes for a humble but flavourful homity pie recipe. A little spinach and nutmeg makes the Hairy Bikers' version even more delicious.
