Oaxacan Black-Bean Tamales

baking apples, peeled, cored and chopped (½-inch pieces)

Egg roll wrappers

butter or coconut oil, melted

In medium bowl, toss together **apples**, **brown sugar**, **cinnamon**, **cornstarch** and **salt**.

Make filling

Place an **egg roll wrapper** on a cutting board with a corner pointed at you.

Using a pastry brush or your finger, brush some water on each edge of wrapper. This will help seal the egg rolls.

Spoon 2-3 tablespoons apple pie filling into center of wrapper.

Fold 2 opposite corners together to make a triangle, fold sides in and roll tightly.

Brush melted **butter** or coconut oil on all sides of egg rolls.  Place egg rolls on **Zone 2** of **Brava metal tray**.

Wrap egg rolls

Slide **metal tray** into **bottom shelf**.

**Note:** You will flip egg rolls after 7 minutes.

Once Brava notifies you, flip egg rolls and return **metal tray** to **bottom shelf**. Press green button to continue cooking.

Cook egg rolls

When your food is done, transfer egg rolls to a serving platter.

Dust egg rolls with powdered sugar, if desired.

Serve with vanilla ice cream, if desired.

In a large bowl combine the warm water, sugar, and yeast. Stir, then set aside for 10 minutes, until it turns bubbly

Combine the flour and the salt. Start adding the flour mixture to the yeast mixture, 1 cup at a time. Mix with a whisk or wooden spoon, and then turn it onto a board that has been dusted with flour, and knead for about 5 minutes.

Put 1 tablespoon of the oil in a large bowl, and coat the sides. Place the dough in the bowl, cover, and set in a warm place for 1 hour. The dough should double in size.

After the dough has rested, divide it into 8 equal sections. Roll each section into a circle 6 inches in diameter.

Add some of the remaining oil to a medium frying pan, and heat to medium. Adding 1 dough circle at a time, cook for 3 minutes on each side, until lightly browned. As you are working, keep the dough covered under a damp dish towel. Repeat the process with the remaining dough.

Bamboo Steamer Sticky Rice Recipe

Thai sweet, sticky, or glutinous rice

Rinse the rice well under cold water for at least a minute. Then, pour the rice and water into a large bowl and let sit for at least 3 hours.

Drain the rice in a colander and rinse it again for 1 minute under cold water.

Line a bamboo steamer with parchment paper and spread out the rice in an even layer. Fill a pot of water with at least 2 inches of water. Make sure that when you put the bamboo steamer on top of the pot, the water is not touching the bottom of the steamer.

Bring the water to a boil, then place the steamer on top. Reduce heat to medium high and steam the rice for 35-45 minutes, or until the rice is cooked and chewy.

Gluten-Free Peach Cobbler Recipe

(2 pounds) frozen sliced peaches, thawed

turbinado sugar

Brush the inside of a 2-quart casserole or baking pan with the melted butter.

In a bowl, toss together the peaches, turbinado sugar, lemon juice and zest, cornstarch, and ½ teaspoon cinnamon.

Transfer the peach mixture to the prepared pan.

In a separate large bowl, stir together the almond flour, brown sugar, baking powder, salt, cinnamon, nutmeg, and cardamom.

Cut in the butter until the mixture is crumbly.

Beat in the egg, milk, and extracts to form a soft dough.

Spread the dough evenly over the peaches.

Sprinkle on the almonds and turbinado sugar.

Bake the cobbler for 45-55 minutes until the filling is bubbly and the topping is golden and firm.

Serve warm in bowls with ice cream or whipped cream, if desired.
