Mast-e Mosir - Persian Solo Garlic Yoghurt Dip

If you’re using fresh solo garlic, peel and finely chop it.

If you’re using dried solo garlic, you should rehydrate it first. Soak it in water for about 5 hours or overnight. Make sure to change the water a few times. The rehydrated dried solo garlic should be soft. Squeeze the excess water out of it with your hand. Then finely chop it.

Combine the yoghurt and finely chopped solo garlic. Season it with salt to your liking. Taste the Mast-e Mosir and add more solo garlic, if you like.

If you want, you can sprinkle it with black pepper. Serve your Mast Mosir with your favourite crackers or crisps (I’m talking about chips, American friends) or serve it as a side dish with a delicious Persian stew. Enjoy!

Arrange oven rack in top third of oven. Preheat oven to 450 degrees F. Line 18-inch by 12-inch jelly-roll pan with foil.

From lemon, grate 1 teaspoon peel into 9-inch pie plate and squeeze 1 tablespoon juice into small bowl. In large bowl, stir mustard and mayonnaise until well combined; add chicken pieces and toss until evenly coated. In pie plate with lemon peel, combine panko, grated Parmesan, oil, ground red pepper, 1/8 teaspoon salt, and 1/8 teaspoon freshly ground black pepper. Dredge 1 drumstick in crumb mixture until well coated, shake off excess, and place on prepared pan. Repeat with remaining chicken and crumb mixture. Bake 30 minutes or until crust is golden brown and juices run clear when chicken is pierced with tip of knife.

Meanwhile, in small bowl with lemon juice, stir yogurt, 1/4 teaspoon salt, and 1/4 teaspoon freshly ground black pepper until smooth. Stir in basil. Fill 12-inch skillet with 1 inch water. Cover and heat to boiling on high. Add asparagus and 1/2 teaspoon salt. Cook, uncovered, 4 to 5 minutes or until bright green and crisp-tender, turning occasionally for even cooking. Rinse under cold running water; drain.

Serve chicken with vegetables and dipping sauce on the side.

Healthy Mixed Vegetable Falafel (Air-Fryer or Baked)

Broccoli Florets (90 grams)

Carrots (Chopped, 64 grams)

⅓ medium White Onion (Chopped, 35 grams)

Put chickpeas in a bowl and fill with water, about 3” over the top surface of the chickpeas. Soak for 24 hours.

Preheat oven to 375°F and lightly grease a baking sheet, or use an air fryer.

Place all ingredients - soaked chickpeas, broccoli, carrots, onion, cilantro, minced garlic, tahini, cumin, cardamom, salt, pepper and cayenne pepper - in a food processor and pulse until finely minced. Do not over-pulse - the mixture should be coarse/paste-y.

Use your hands or a cookie scoop to shape falafel mixture into small balls or patties and place in air fryer basket or prepared baking sheet.

Air fry at 350°F for about 15 minutes, or Bake for 25 minutes, flipping half way, until golden brown and crisp. See notes for frying.

Combine all ingredients for sauce in a bowl.

Serve falafel with the cool sauce and a warm pita!

I made this recipe today and it was amazing.
I actually had some veggie pulp leftovers from juicing (beetroots, celeriac, carrots and apples).
I first blended the soaked chickpeas, tahini, garlic, onion and spices, then just stirred in the veggie pulp. I adjusted the spices, added a bit more cumin, cayenne pepper and cardamom powder.
I shaped the mixture into balls and baked them for 30 minutes flipping halfway. They looked golden brown, but were not crispy. I didn’t mind though. 
In the yoghurt sauce I added just a touch of salt and pepper and a bit more garlic.
This combination was indeed BOMB! I couldn’t stop eating!

Place the yogurt, mint, lemon, salt, and pepper in a bowl and stir well to mix. Taste and adjust for salt and pepper. Set aside in the refrigerator.

Slice the zucchini into ⅛-inch rounds using a knife or a mandoline slicer. Try to make them all the same width.

Place the zucchini rounds in a mixing bowl with the oil and seasonings and toss well to coat the rounds evenly.

The ingredients list says lemon juice but the instructions say lime juice — I went with lemon and enjoyed it :) but I’d love to know which was the intended citrus! haha

Heat the butter in a large pan over medium-high heat.

Add the sliced leeks and fry for 5 to 6 minutes until soft but not browning.

Remove the leeks from the heat and set them aside to cool.

To make the accompanying garlic and chive yogurt, combine the yogurt, minced garlic, lemon juice, 1 tablespoon of olive oil, the chopped chives, and salt and pepper, to taste. Set aside.

In a large bowl, whisk together the eggs, mustard powder, flour, baking powder, and milk to form a batter.

Stir in the cooled leeks, the chopped parsley, chopped tarragon, and the grated cheddar, and season to taste to complete your fritter batter.

Heat the remaining 2 tablespoons of olive oil in a large pan over medium heat and dollop tablespoon-sized amounts of the fritter batter into the hot pan.

Allow the batter to cook for 3 to 4 minutes until the bottoms are crisp, and then flip the fritters over and cook them for another 3 to 4 minutes on the other side.

Remove cooked fritters from the pan and repeat this process until all of the batter has been used up.

Serve the fritters warm with a spoonful or two of the garlic and chive yogurt.
