Keto Breakfast Casserole

grass-fed butter

Preheat the oven to 350°F (175°C).

Warm butter in a frying pan over medium heat. Sauté the onion and garlic together for 5 minutes.

Remove the sausage from its casing and add to the pan also. Break apart into smaller pieces and brown all sides evenly, about 8 minutes.

While the sausage browns, whisk 10 eggs in a large bowl. Mix in the cheese, thyme, salt, and pepper.

Transfer meat to an 8x8-inch (20x20 cm) glass baking or casserole dish. Arrange in a single, even layer on the bottom.

Pour the egg mixture over the meat. Gently jiggle or tap the dish so the egg can settle down around the meat.

Bake for 20 minutes, until eggs are set and top is golden brown. Let rest 5 minutes before slicing and serving warm.

Put 3-4 drops of Fruit Punch MIO in...

These Carnivore Fat Bomb Egg &amp; Cheese Muffins have just three ingredients (eggs + raw cheese + salt) and are quick and easy to whip up.

Carnivore Fat Bomb Egg &amp; Cheese Muffins

Preheat your oven to 350 degrees.

In your mixing bowl, beat 10 eggs to a smooth consistency. Using a hand mixer is fine, but it is not necessary.

Shred the raw cheese (ASHLEY20 for 20% off) into the mixing bowl. Fold the cheese into the eggs to combine and add a dash of sea salt (ASHLEYR for 15% off).

Make the muffin batter.

Fill each slot (about 3/4 of the way or a little more) of your cupcake baking pan with the egg-cheese batter.

Bake the muffins at 350 degrees for 20 minutes.

Bake the muffins.

After the muffins are done baking, set your oven to broil and broil the muffins until the tops brown. This should take 30-60 seconds.

Note: watch the muffins closely while you broil. Just a few seconds too long on broil can burn them quickly.

Once the muffins are done broiling, remove them from the oven and allow them to cool for about 10-15 minutes.

Leftovers can be stored in the fridge in an airtight container for 4-5 days.

With slightly charred tops, fall-off-the-bone-meat, and extra ghee to make the broth buttery, these oxtails are wonderful - the perfect base for a hearty, fatty soup.

Prep the oxtails. Salt both sides liberally with sea salt (ASHLEYR for 15% off).

Press Saute on your Instant Pot for 30 minutes. (Note: for older versions, press &#039;Saute&#039; button then &#039;Adjust&#039; button; for newer versions, press &#039;Saute&#039; button twice.)

While it&#039;s warming up, place 2 tbsp of ghee (or fat of choice, although I do highly recommend ghee with this due to its buttery flavor) in the Instant Pot.

Once the unit displays &quot;HOT&quot; on the LED screen, swish around the melted ghee to get an even layer on the floor of the Instant Pot, and place the oxtails inside in an even layer (all bottoms should be touching the floor).

Saute the oxtails on one side for 5 minutes. To get an even char, rotate the oxtails 180 degrees about halfway through.

Flip the oxtails and repeat on the other side: saute for five minutes and rotate 180 degrees about halfway through.

Unplug the Instant Pot (I do this to reset it and change function - I haven&#039;t figured out how to change function midway through without unplugging it).

Set it to Manual/High Pressure for 50 minutes. Add 3/4 cup of water. Close and allow to cook.

When the Instant Pot turns off, let it slow release for 10 minutes.

Once slow release is complete, vent the pressure cooker. The oxtails are done!

Divide the oxtails and broth in two, and place in bowls. If you have a salty palette, top with more salt of your choice.

Serve, savor, and enjoy!

Slightly freeze meat

If you want to dice the meat very very tiny, freeze meat for about 20 minutes.

Slice meat

Then remove from freezer, slice into thin strips, then dice into tiny cubes.

Combine ingredients

In a bowl, combine all the ingredients and mix thoroughly.

Serve

Serve tartare in a bowl. Serve by making a small dip in the top of the tartare mound and gently place the egg yolk on top.

Prepare

Whisk eggs with salt and pepper. Turn heat down to medium-low.

Cook

Add butter to the pan with the sausage and then pour in the whisked eggs. As the eggs are cooking add in chopped bacon pieces. Continue to stir and cook until the eggs are cooked to your liking.

Finish

If using cheese, stir in or top off with cheese once your scramble is finished cooking.
