Step 1
Heat oil in a skillet over medium-high heat. Add linguica sausage and cook until the sausage is cooked through and turns brown. Transfer it to a plate.
Step 2
In the same pan, add onions and salt. Cook until the onion has softened, for about 5-6 minutes. Transfer it to the plate.
Step 3
Add potatoes to the pan, then season with salt. Then add chicken broth, and increase heat slightly and bring it to a simmer. Then reduce the heat to medium-low and simmer for about 8 minutes or until the potatoes are tender.
Step 4
Using a potato masher, mash the cooked potatoes in the broth. Add kale to the broth.
Step 5
Add back cooked sausage and onions.
Step 6
Cook for about 30-45 minutes or until the kale is tender. Serve and enjoy!
