Black Bean and Corn Guacamole

avocado,

lime juice

salt

black beans,

kernel corn

pepper

In a bowl, mash avocados until almost smooth. Stir in lime juice and ½ teaspoon salt. Let stand 10 minutes to allow flavors to blend. Adjust seasoning with additional lime juice and salt if desired. Top with black beans, corn and pepper.

We made this tonight (1-6-22) and it was so good! I've never added corn or black beans to my guacamole but I don't think I can go back! My daughter (9) told me it was her favorite guacamole. I left out the pepper as I can't eat it. I used frozen corn, thawed, but when I make it again in the summer I'll use fresh but frozen was great for the winter. Thanks for sharing!
