Step 1
Spray a casserole dish with cooking spray.
Step 2
Cut peppers in half lengthwise. Remove the seeds and place peppers in the casserole dish. Cover with foil.
Step 3
Add remaining ingredients to a bowl with lid and mix well.
Step 4
Bake peppers, covered, at 375 for 8-12 minutes, or until they begin to soften.
Step 5
Remove the peppers from the oven, and remove any water that may be inside of them. Stuff peppers with chicken mixture, and sprinkle with shredded cheddar.
Step 6
Bake for 15-20 minutes, or until warmed through. Top with ranch dressing and blue cheese crumbles if desired.
Step 7
Serve with green salad and baked tortilla chips.
