Preheat your waffle iron.
Step 2
Sift the baking soda, salt, and flour together.
Step 3
Beat the egg yolks together. Add in buttermilk and beat together.

Add the flour mixture to the buttermilk mixture, and mix only to blend. Do NOT overmix!
Step 5
Stir in melted butter to the mixture.
Step 6
In a separate bowl, beat the egg whites until stiff (but not dry!) Fold egg whites into waffle mixture - but do not blend completely.
Step 7
Follow the directions for cooking waffles from your waffle iron. Bake the waffles until they are crisp and brown on the outside and soft on the inside.
Step 8
Serve waffles with butter and maple syrup.
