Step 1
The night before heading out camping, scramble eggs in a medium bowl. Add cheese, lunch meat, green onions and salt and pepper. Pour into a large gallon sized zip top bag (freezer bag) and freeze. Pack zip top bag of eggs in cooler when you head out camping.
Step 2
When at campsite, fill medium sized pot 2/3 full of water. Bring to a boil. Submerse zip top bag of eggs and other ingredients into boiling water.
Step 3
Return water to a simmer. Using tongs, move bag around occasionally while cooking to ensure even cooking, paying particular attention the the contents in the center of the bag to make sure all contents get evenly cooked.
Step 4
Simmer for approximately 10-15 minutes (depending on how cold/frozen the bag is). When the contents are light yellow and fluffy throughout, the eggs are fully cooked. Remove bag from boiling water very carefully. Open bag carefully and pour eggs onto large plate. Fluff with fork and serve immediately. Enjoy the rest of your camping day!
