Cheeseburger Pockets

tube (12 ounces) refrigerated buttermilk biscuits

Preheat oven to 400°. In a large skillet, cook beef, onion, salt and pepper over medium heat, crumbling beef, until meat is no longer pink; drain and cool.

Place 2 biscuits overlapping on a floured surface; roll out into a 5-in. oval. Place about 1/4 cup of meat mixture on 1 side of oval. Fold a cheese slice to fit over meat mixture. Fold dough over filling; press edges with a fork to seal. Repeat with remaining biscuits, meat mixture and cheese.

Place on a greased baking sheet. Prick tops with a fork. Bake 10 minutes or until golden brown.

I added cumin, coriander, Worcestershire sauce, ketchup, green peppers, garlic powder, and a sprinkle of brown sugar. Our house has lactose issues so substituted lactose free cheese (Vermont cheddar in this case). Used jumbo biscuits instead of regular ones. Will likely make again, just too quick and easy to ignore.

After reading the reviews I decided to cook bacon to go in the beef mixture, along with adding ketchup and seasoned salt. I definitely will make this  again, probably will try BBQ sauce in meat mix, next time.

The original filling is great, but can easily be changed to suit your taste.  Also, I just roll each biscuit out individually, making the top one slightly larger; add the filling; top with the larger biscut and seal the edge with a fork.

My family LOVES these cute little meat pockets and have been making them for years. I too use the large biscuits. I make a very large batch and freeze part of them in zip bags then pull out of the freezer and either microwave wrapped in a paper towel or throw in the toaster overn for quick meals. I've also substituted sausage for the hamburger and then scrambled some eggs and made breakfast pouches. This is a great versatile recipe.

Excellent... This is what we had for dinner. Except that I made them using the large biscuits and made some of them using swiss cheese, sautéed mushrooms and burger and some where burger, pepperoni and mozzarella cheese and pizza sauce? Both were excellent? I decorated them with hearts and happy smiles to let the steam out? and to keep straight which one was which...

Very good. Easy to make and had a good taste. I only used one biscuit for each pocket, which made more and they are good reheated. This is a keeper!!!

I've also played around with the fillings. Ground ham and cheese is good, as well as broccoli and cheese, chicken, mayo, and Swiss, leftover sloppy Joe filling, leftover taco filling, etc. However, the original filling is the one we use the most.

I add onion soup mix to the hamburger and brown it up.  Next I drain it, mix in a little mayo and shredded cheese.

These hit the comfort spot with me - typical American kids food!! My husband really enjoyed them and they were a nice change from usual meat/potatoes. I used sausage meat cuz that's what I had, seasoned it with garlic and a blob of cheez whiz on top cuz I didn't have cheese slices. You could really put whatever meat/herbs/seasonings you wanted in these and they would turn out yummy!

I made them with ground beef and sauteed onions.  Delicious!  I love that you could stuff the pockets with whatever ingredients you wanted to.

We used our own favorite burger mix in the biscuits. It just seemed a tad bit dry. Not sure what kind of sauce would go with something like this. Ketchup or bbq sauce would probably ruin the biscuit flavor. I'll have to experiment again with this recipe with another mixture.

My very picky husband and son really enjoyed these. To save time I use dried minced onion vs. chopping fresh.  They were super easy and fast to put together for weeknight dinner and my son could help which is a plus since he's 3.  Also think we can easily customize to try different flavors, tastes and still appeal to their specific requests.  Next time I think I'd add some diced tomatoes or green pepper to try for a more Mexican flavor.  We'll make these again for sure!

My 3  teens loved  them, I used about a pound and a quarter of burger and 2 tubes of the dough. Omitted onions.My kids want to deep fry them next time, so we may try that!

This is a great way to get my daughter that doesn't like meat to eat a good meal! Its cheesy and the "pocket" makes it fun! Clever idea- I serve this about once a month.

These were great.  I used the  large biscuits that come eight to a can and they turned out perfect.  Next time I am going to put some bacon and barbecue sauce in the hamburger because we all love BBQ bacon cheeseburgers.

As written they are simple and good, but could use some oomph, some steak seasoning or whatever you like to put in your burger mix.   Next time I'd add ketchup and mustard either to the mixture, or as a glaze on the outside of the pockets.   I am not a fan of American Cheese, so I used shredded cheddar.    You could also brush the outside with egg wash and sprinkle on some sesame seeds.

My daughter makes these and adds french style green beans for a complete meal.Delicious.
