1 Rinse and drain the chickpeas; transfer to a large saucepan and add 2 cups water

2 Bring to a boil over medium-high heat, then drain in a colander until cool

3 In a large serving bowl, whisk together the oil and lemon juice until well blended

4 Season lightly with the salt and pepper
