Step 1

Mix pork, curry paste, garlic, chilli and lime juice in a bowl and marinate for 1-2 hours.

Step 2

Heat oil in wok until very hot and lightly sear and cook pork for 2-3 minutes in a couple of batches. Add any remaining marinade and heat through.

Step 3

Combine pork in wok, add peanuts, stock, shallots, coriander, fish sauce and cooked noodles.

Step 4

Heat and serve.
