Step 1
Add chicken to a slow cooker and season with salt and pepper

In a large saute pan, heat olive oil over medium heat

Add the onion with a large pinch of salt and saute until softened, 7 to 10 minutes

Add the garlic, jalapeno, green chiles, cumin, cayenne and oregano and stir another 1 to 2 minutes

Transfer the mixture to the slow cooker, then add chicken stock

Cover and cook on low until the chicken is tender, about 4 hours

Remove the chicken, shred it and return it to the slow cooker

Add the beans and spinach and stir

Replace the cover and cook another 30 minutes to an hour
Step 10
Taste for salt and season, as needed
Step 11
Just before serving, squeeze the lime juice into the chili and stir

Serve the chili in bowls and let everyone choose their toppings
