Step 1

Crumble/cut vegan sausages into small pieces. Heat a tbsp of oil in a pan on medium heat. Add the sausage and fry for a few minutes until crispy and golden. Add the herbs, mix and transfer to a bowl.

Step 2

Heat a tbsp of oil in the same pan and add finely chopped onion. Let cook for a few minutes and then add crushed garlic. Cook for a further minute.

Step 3

Finely chop the sun dried tomatoes and quarter the cherry tomatoes. Add to the pan along with the the tinned tomatoes. water and salt and pepper.

Step 4

Bring to a gentle simmer for 10-15 minutes until the sauce has thickened. Add the cream, nutritional yeast and gnocchi. Add the chilli flakes if you want a bit of spice.

Step 5

Cook for 2-3 minutes until the gnocchi is soft through. Add the sausage and stir to heat through.

Step 6

Serve and top with some vegan parmesan and extra black pepper!
