Step 1
Peel your potatoes and then carefully slice into cubes.
Step 2
Put them in a large bowl, and fill with cold water. Soak for at least 10 minutes, before rinsing and then patting dry with a kitchen towel or a clean tea towel.

Preheat your air fryer.
Step 4
Add the potatoes to another bowl, then add the olive oil, paprika, salt, garlic powder, onion powder, and oregano. Using your hands give it all a good mix so the potatoes are evenly coated.
Step 5
Add the seasoned potato cubes into the air fryer basket, making sure they're in a single layer. You may have to do two batches.
Step 6
Cook for 20-25 minutes at 200°c/400°F (dependent on your air fryer model) and make sure to shake the basket a few times to help the diced potato cook evenly and become crispy.
Step 7
Once the diced potatoes are golden brown and crispy, they're ready to serve alongside your favourite meals. I like to sprinkle some fresh parsley on top before serving.
