In a 5 qt crockpot or larger mix quinoa, veggies, marinara sauce, and chicken broth.
Step 2
Place chicken breasts on top.
Step 3
Cover and cook on high for 2 to 2 1/2 hours or low for 4 to 5 hours.
Step 4
Once chicken is cooked through and quinoa has absorbed the liquid top the chicken with the mozzarella cheese. Cover again with heat on to melt the cheese (about 10 minutes)
Step 5
Serve with a side salad.
