Step 1
SAUCE: In a small bowl, whisk together the sauce ingredients and set aside. Bring a large pot of water to a boil but do NOT salt the water! Thinly slice the green onions and separate the white bottoms from the green tops.

PORK: Heat 1 tbsp oil in a large skillet or wok over high heat. Add the pork and let it sear for a few minutes before breaking it apart and crumbling with a wooden spoon. Once the pork is browned, reduce the heat to low.
Step 3
ADD SAUCE: Pour the sauce over the pork and add the cashews. Stir constantly, allowing the mixture to simmer until the sauce reduces by half, about 2-5 minutes. Add the white parts of the onions and sauté for 1 minute.
Step 4
NOODLES AND BROCCOLI: While the pork cooks, add the noodles to the boiling water and cook according to package directions. Add the broccoli 2 minutes before the noodles are done. Drain and toss with the remaining 1 tbsp oil.
Step 5
COMBINE: Add the noodles and broccoli to the skillet with the pork. Toss everything gently with tongs until well combined and coated in the sauce. Top with the green parts of the onions and an extra drizzle of sesame oil if desired. Serve immediately and enjoy!
