Divide cooked carrots in half. Puree one cup of carrots and mix with the milk to add into your waffle mix.
Step 2
Follow instructions on the box to mix the batter for your waffles. Make waffles according to box instructions.
Step 3
Add your pureed carrots into your waffle mix.
Step 4
The carrot waffles will cook in about 3 minutes in your waffle iron. Remove when they are golden brown.
Step 5
Use reserved carrots to create a maple syrup topping for your Easter waffles. Mix remaining cup of carrots with 2T - 4T maple syrup in a non-stick pan. Heat them until the syrup has thickened to glaze the carrots.
Step 6
Serve waffles with warm carrot syrup on top.
