Step 1
Start by combining all the marinade ingredients together in a small bowl.

Place the chicken in a tray or a rectangular container with a lid. Pour over the marinade and set aside in the fridge for a couple of hours or even overnight.
Step 3
When ready to cook, remove from the fridge for 30 mins. Heat a BBQ to a moderate heat. Place the chicken on the grill, bottom (cut) side down. Turn the heat to low, close the lid and cook for 10 mins. Then turn and cook (skin side) down for 5 mins with the lid closed.
Step 4
While cooking the chicken also char the lime cut side down.
Step 5
Turn the heat off and let it rest in the hot BBQ for 5 minutes. Check it is cooked either with a meat thermometer (placed in the breast) or pierce with a skewer and make sure there are no pink juices.
Step 6
*Butterflied chicken – this really helps the chicken to cook though more easily. You can ask your butcher to butterfly the chicken (and remove the rib cage) or there are plenty of online tutorials for doing this at home.
Step 7
You could also use a kilo of thighs or even marylands if you'd prefer.
Step 8
Cut the chicken into pieces and serve with the charred lime and fresh coriander leaves.
Step 9
Re-heat in a low oven (covered) until just hot.
Step 10
Store in an airtight container in the fridge or freezer.
