Step 1

Heat EVOO in Dutch oven; add mirepoix.

Step 2

Saute mirepoix 4-5 minutes or until tender, adding garlic last few minutes of saute.

Step 3

Heat water and bouillon cube in microwave until water boils; stir to dissolve bouillon.

Step 4

Add tomato soup, canned tomatoes, lentils, and broth mixture to Dutch oven.

Step 5

Bring to boil; reduce to simmer.

Step 6

Simmer for 20 minutes or until ready to serve.
