Step 1
Peel and cut the potatoes into bite sized pieces. Boil in water until the potatoes are tender.
Step 2
Mash the potatoes well with 2 Tbsp. of butter.
Step 3
Add the cooled potatoes to a mixing bowl with the eggs, flour, nutmeg and salt and pepper to taste.
Step 4
Form the dough into 12 even pieces.
Step 5
Heat the oil in a skillet over medium high heat.
Step 6
Fry the potato pancakes until golden brown and crispy.
Step 7
Drain on a paper towel lined plate before serving.
