Preparation 2 Mixing Bowls1 Electric Mixer2 Regular-Sized Muffin Tins (to make a total of 12) Preheat oven to 425°F Mix all dry ingredients wellBeat eggs in a separate bowlCombine eggs and dry ingredientsMix well with electric hand mixerAdd the milk or cream to batterBeat for a couple of minutes(should be the consistency of thick cream) Put less than 1 tsp. of beef drippings into each muffin cupYou only need to line the bottom of each cupPlace greased muffin tins in the ovenHeat until the oil is VERY hot (but not on fire!) Distribute the batter evenly into the 12 muffin cupsBake at 425°F for 15 minutes Do not open the oven to check progress If the puddings are well risen by then, turn the oven down to 375°F to finish baking (should be about 5-10 minutes)Bake until deep golden brown on top Makes 12 Muffins
