Step 1

In a large pot of salted water, over medium-high heat, add the potatoes and bring to a boil.

Step 2

Reduce the heat to medium-low and simmer the potatoes until they are tender, about 10 minutes.

Step 3

Drain the potatoes and let them set until they are cool enough to handle, about 10-15 minutes.

Step 4

Use a box grater to shred the cooled potatoes and drain any of the excess water.

Step 5

In a large bowl, add the shredded potatoes, the parsley, the flour, the salt, the seasoned pepper, and the onion powder and stir to combine.

Step 6

Shape the potato mixture into 1-inch-long nuggets.

Step 7

In a deep fryer or large sauce pan, heat the peanut oil to 350 degrees F.

Step 8

In batches of 5-10 potato nuggets at a time, use a slotted spoon to carefully lower them into the heated oil and fry until they are golden-brown and crispy, about 3-4 minutes per batch.

Step 9

Place the tater tots on a paper-towel-lined plate and let drain.

Step 10

Serve immediately.
