Roast the chile peppers on a frying pan until lightly toasted.

Place the peppers in cold water and let them sit for 30 minutes, Drain and set aside.

Add the peppers to a food processor with the garlic, vinegar, salt, and cumin. Puree until smooth.

Place the sauce in a container and use it to marinade chicken, beef, or pork.
