Ham Salad Recipe

cream cheese,

scallions, finely chopped

flat-leaf parsley

Creole mustard

cayenne pepper

black pepper

smoked fully cooked ham, finely chopped

Stir together 4 ounces of cream cheese, 2 scallions, 2 tablespoons of parsley, 1 tablespoon of Creole mustard, &frac14; teaspoon of cayenne pepper, and &frac14; teaspoon of black pepper in a medium bowl. Fold in 8 ounces of ham.


Because of Covid, my daughter's wedding reception was a small gathering of about 30 people in our yard - a garden party, really.  I used this recipe for the finger sandwiches and it was a hit!  This is my ham salad recipe from now on.  I doubled the recipe and used the packaged diced ham and paired it with Pepperidge Farm white bread.  Pumpernickel would also work and so would just having it as a spread with good quality crackers.
