In the Instant Pot, add water, dark soy sauce, light soy sauce, oyster sauce, sugar, ginger, garlic, star anise, and cinnamon stick. Stir well.

Place the chicken in the Instant Pot, breast side up. Add the knotted spring onions on top. Close the lid, set to "Pressure Cook" on high for 25 minutes.
Step 4
Once done, let the pressure release naturally for 10-15 minutes, then quick-release any remaining pressure.
Step 5
Remove the chicken, brush with sesame oil, and slice. Serve with rice and drizzle some sauce over the chicken.
