Step 1
If you are not making homemade Concord grape juice, use 2 ½ cups of organic Concord grape juice and omit the filtered water. If you’re making homemade Concord grape juice, wash the Concord grapes - washing the grapes in a vinegar-water, vinegar-salt-water or baking soda-water bath will help remove leftover residue, debris and dirt.
Step 2
Remove the washed and dried individual grapes from the stems and place the grapes in a blender or food processor, then add ½ cup of filtered water. Secure the lid on the blender or food processor and pulse a few times, just until the grapes have burst, started to release their juices and have turned into a purple juicy puree.
Step 3
Set a fine mesh strainer over a large measuring cup or large bowl, then pour the grape juice puree through the strainer, leaving the seeds and skin behind to discard.
Step 4
To a medium saucepan, add half of the grape juice and temporarily set aside.
Step 5
Sprinkle the gelatin over the reserved fresh juice in the glass measuring cup or bowl. The gelatin will start to “bloom” and start to absorb the liquid and solidify as it sits. Let this rest while you prepare the remaining juice.
Step 6
Get the saucepan with grape juice in it and place it over low heat on the stovetop. Gently warm the grape juice (do NOT boil or simmer it) for a few minutes until it is warm. Then add the honey and stir with a whisk until it dissolves, about 1 minute.
Step 7
Add the bloomed gelatin-juice mixture to the warm grape juice, whisking to combine until all of the gelatin has dissolved, about 1-2 minutes, then remove from the heat. If any small lumps of gelatin remain, you can strain it through a fine mesh strainer. Straining it will also help remove some of the leftover foam from homemade grape juice, but this step is completely optional.
Step 8
If you’re choosing to add the optional vitamin C powder, add it to the grape juice-gelatin mixture now and whisk to combine.
Step 9
Get your silicone molds ready (or glass oblong dish) and place them on a flat surface. Carefully pour the grape gelatin mixture into the silicone molds or glass dish. Place the grape gelatin molds into the refrigerator for about 30 minutes to allow the gummies to set.
Step 10
When the grape gummies have fully set, carefully remove the gummies from the molds or if using a glass dish, slice them into bite size pieces and enjoy!
