Step 1
Trim all of the leaves from the cauliflower. Cut in half, lengthwise, and cut out the core.
Step 3
Cut or break the cauliflower into medium florets. Place half of the florets in a food processor and process until they are the texture and size of rice. Repeat with remaining cauliflower.
Step 5
Use raw in salads, or cook (e.g., steam or sauté) for 2 to 5 minutes for use in any of your favorite recipes that call for traditional rice.
