Preheat the oven to 400 degrees F.

Grease a 9x9-inch casserole dish.

Prepare the corn muffin mixes according to the package directions.

Add the chopped onion and the spicy brown mustard to the corn muffin batter and stir until well-mixed.

Spread 1/2 of the corn muffin batter into the prepared baking dish.

Top the batter layer with the sliced ham and then the shredded cheese.

Top the cheese later with the remaining batter, gently spreading it to cover.
