Step 1
Add water and rice to the Instant Pot. Cover the pot and secure the lid. Make sure valve is sealed. Set the manual/pressure cook button to 5 minutes. When time is up let the pot sit for 10 minutes and then move the valve to venting. Remove the lid. Scoop rice into a bowl.
Step 2
Turn Instant Pot to the saute setting. When the display says HOT add in the oil and swirl it around. Add in the eggs and scramble them, breaking them into very small pieces.
Step 3
Add in the white rice, soy sauce and sesame oil. Toss until rice is full coated. Add in the frozen peas and carrots and toss until they are heated through (about 1-2 minutes). Turn off Instant Pot.
Step 4
Serve and enjoy!
