Step 1

1 Preheat the oven to 400°F (200°C).

Step 2

2 Shred the rotisserie chicken into bite-sized pieces and place in a medium-sized bowl.

Step 3

3 Dice (cooked) bacon and chop up the tomatoes and pickles. Mix all three together with the chicken. Add mayonnaise and ⅔ of the cheese and stir. Season with salt and pepper to taste.

Step 4

4 Pour the mixture into a greased baking dish. Sprinkle the remaining cheese on top and bake for about 20 minutes or until golden brown.

Step 5

5 Serve with leafy greens and olive oil.
