Step 1
Preheat the oven to 150°C/300°F (fan-forced).
Step 2
In a Dutch oven place the onion, garlic, chilli, star anise, cinnamon, oregano, ground cumin, ground coriander, bruised cardamom pods, seasoning, canned tomatoes, broth or stock, balsamic vinegar and honey. Mix well.
Step 3
Add the lamb chump chops and mix well. Place the lid on the Dutch oven and cook for 2 hours.
Step 4
After 2 hours, skim the fat that’s settled on top, add the vegetables and cook for another hour with the lid on.
Step 5
Serve with the coriander leaves mixed through.
Step 6
Re-heat in a pot over a low heat until just hot.
Step 7
Airtight or covered in the fridge or freezer.
