Combine all marinade ingredients. Add the chicken and mix well. Cover and refrigerate for 6–24 hours. If pressed for time, allow to marinate at room temperature for one hour.

Preheat the grill to a high temperature. Rub the grill skewers with the cut side of an onion, then thread the chicken onto them.

Barbecue the chicken until browned at the edges and cooked through, usually 5–10 minutes, turning occasionally for even cooking. If using an oven, set the broiler to high. Remove any wooden or plastic handles from the skewers. Cook high in the oven until browned at the edges and cooked through, turning occasionally. This’ll take 5–10 minutes. Watch the whole time and don’t leave the oven unattended.
